Pronounced: show pow. Don't know if i spelled it right in the question... anyway i'm wondering if it's not strictly filipino, what other nationalities make this as their own? it's not really "cuisine" more like a tiny lunch or big snack.

I've eaten a Sio Pao in the Philippines, Thailand, Malaysia, Laos, Cambodia, Vietnam, Indonesia and Brunei. It goes by different names and the stuffing is usually different and has varying tastes. Thai, Malay and Indonesian Sio Paos ( I dont know what they are called in those languages) are usually spicier.

While Thais make theirs with chicken or pork stuffings, Indonesian and Malaysian ones are strictly beef or chicken due to Islam's restrictions on pork.

Laotians, Cambodians and Vietnamese also use shrimp or fish as their stuffings and sometimes, you can find more exotic Sio Paos in these countries...made of different meats and in varying colors- by using food dyes.

In India too I found one version of Sio Pao but the thing was a bit smaller and spicier.

In most of these countries I've visited, Sio Pao was available at 7-11s, Star Mart, Lemon Green, KK, Kiosk, One and other stores, usually in the mornings and late afternoon.

No... I think it's origins is Chinese. As you probably know, there are a lot of Chinese in the Philippines.

Steamed BBQ pork buns - Cha Sui Bow... even the filipino name sio pao is a variation of the Chinese name.
