It was not easy for me to give up any of it. I miss meat terribly to this day. But the health benefits of being a veggie outweigh the short lived pleasure of a double cheese burger with bacon, heavy mayo and a side of curly fries. And a NY strip steak cooked medium rare on the grill is to die for. Excuse me for a moment, I'm salivating. I actually have dreamed of eating a burger and wake up mad at myself until I realize it was only a dream. But you can do this, the benefits of a healthful veggie diet are worth the sacrifice.
But it does get easier. Your taste changes and you will learn to enjoy healthy vegetarian dishes as much as you did meat dishes. Inconvenience is the biggest obstacle for me. Eating a "HEALTHY" low fat vegetarian diet is very difficult in our fast paced world, and most restraunts may have vegetarian dishes, but most are not very healthful. I have found that I do not eat out nearly as much since I became a vegetarian. But believe it or not, I look forward to and enjoy eating more so now than ever before. In addition, when eating a healthful low fat veggie diet you can pretty much eat as much as you like (within reason) and still maintain a healthy weight. That is really a major benefit when you consider that diseases caused by the obestity epidemic throughout the world will not be an issue for most veggies!

I found it easiest to give up pork, as I never liked it in the first place. Beef is after that, as it LOOKS like it's from an animal. Really, it wasn't too hard to give up any of it, but I transitioned over the course of a year (I was 15) because I knew it was a life change for me. Now I don't miss it at all. Living with meat-eaters was a little harder, as the smell of bacon etc. made me gag.
All I can say is stick with it. You won't realize it's happening, but your desire changes over time and one day you will walk right by a burger joint without so much as a pang. (I'm 24 now, so 9 years and still very happy with my decision.)

I agree pork was easy to give up, as was beef. I did eat chicken a little longer than pork and beef but that only lasted like 6 months. I never really enjoyed eating meat and I refused to cook it so it wasn't too hard for me.

I don't know what was the easiest to give up but for me Fish was the hardest to give up! I guess pork may have been the 2nd hardest to give up not because of it being any better than fish, it was because I was on a pork farm! Eventually I got sick of it! Probably liver was the easiest to give up! Who likes that? I never really cared much for meat in the first place!

Pork was extremely easy for me to give up, as I only ate it about once a year anyway. Never really liked it. Next was beef, because, I don't like cooking things that are full of blood. Chicken was kinda hard but meh, I don't need it.

The easiest to give up was beef. I didn't plan on becoming a vegetarian, it kind of just happened. I used to love meat, one week I had some form of red meat 17 times during meals, yes that is 3 times a day on some days. I used to say "I could never be a vegetarian."
Then one day during the week following the one described above, a doctor told me of an impending heart attack. I saw my father a few years earlier after one and knew I wanted nothing to do with a heart attack. Giving up red meat that moment was the easiest decision I ever made.
Chicken and fish followed within the year. I gave up heart attacks during the same period.

Cooking is my hobby and when I was little, I used to watch and help my mom a lot. Just seeing raw meat makes me not crave any of it...they were all pretty simple to give up.
I think the easiest one for me was poultry. The turkey at Thanksgiving, whole chickens and other various game are SO unappetizing before they are prepared! The pin feathers, the blood, the veins, the fat...count me out! Yuck.

it was beef because I gave up hamburgers many years before becoming a vegetarian. I gave up hamburgers because the beef didn't taste good. I never realized how right my taste sense was until I read the books "Fast Food Nation"
and "Slaughterhouse". After reading those books, I realized why beef tastes bad. I probably going to miss chicken and pepperoni pizza. I get those coupons in the mail and think I'm going to get a pizza but the coupons just lay there on the kitchen table until they expire....

Meat was pretty easy to give up, but for me the hardest thing to give up as a vegan was Mint Chocolate Chip Ice Cream.
They do have vegan versions, but I sometimes shake my head sadly when I see a 5 gallon tub of mint chocolate chip ice cream cost the same as a quart of the vegan analog.

Actually the hardest thing for me to give up is not a flesh food but cheese! The only flesh food that I really miss is salmon. I haven't been able to find a "mock" meat that tastes anything like it. But I've been able to just forget about having it anymore. I can cook so many other things that are extremely tasty!
