I forgot about the angel food cake...I just buy a cheap one..it reminds me more of cardboard than eggs...I have never made angel food cake from scratch...sometimes I think it is easier to be a vegetarian who drinks coke and eats mike sell's potato chips and eats Taco Bell bean burritos and oatmeal.

(Trial Run) Angel Food Cake (vegan)(see note below)

INGREDIENTS
1 cup self-raising flour
4 tablespoons cornflour
Pinch of salt
1 cup soft brown castor sugar
7 ounce block of tofu
1 cup soy milk
2 heaped tablespoons chickpea flour
1/2 cup oil
2 tablespoons lemon juice
1 teaspoon vanilla extract

METHOD
Place the tofu, sugar, gram flour, oil, vanilla and lemon juice into a blender and blend well. Add the soya milk gradually.
Transfer to a large bowl and fold in the flour.
Spoon into a greased 9 inch / 23 centimeter cake tin (the sort with a detachable bases and loosenable side is best) and bake for 45 mins at gas mark 4 / 180C / 350F until golden and firm to the touch. Cool in the tin.

NOTES
Please note that I have not attempted this recipe so it will almost certainly need tweaking.

Use agar powder in the same amount as the gelatin (in this case 2 Tbsp). Bryanna Grogan claims to have an angel food recipe that (kind of) works but I've not heard of anyone having success with it. There are some good sponge cake recipes that should do well with this as a substitute for the angel food though (I'm sure you have links). Soyatoo works well in this kind of recipe to replace the Cool Whip also.

Unfortunately, there is no way you can make that vegan. But if you eliminate the gelatin, you can make it vegetarian.

Angel food cake is made with something like 8 eggs. It's one of the only foods that has no vegan analogue.

Cool whip isn't vegan, but if you can find hip whip that is vegan. Non-dairy isn't the same as vegan.

As for gelatin, you can use agar-agar, or get vegetarian gelatin from a 7th day adventist shop. I'm not sure about the conversion amount though.

Actually, Cool Whip contains a milk derivative, sodium caseinate.

You can find vegan gelatin online...check out healthy-eating.com. That site also carries a soy whipped cream. Angel food cake is not vegan, as it contains egg whites, but maybe you could find a recipe for vegan angel food cake online.

Ummm, just so ya know... Taco Bell bean burritos aren't vegan. They use lard in their cooking, which makes them just as much an animal product meal as a taco with meat.

And, as far as a substitute for gelatin, agar is usually a pretty good substitute. You would use the same amount of agar as you would gelatin.
Good luck.
