if vegetarian you just have to avoid poultry, red meat and fish (yes, to be a veggie, you cant eat it!) and gelatin.
to be vegan you need to avoid the above and dairy and egg products. some include honey, some include white sugar.
ill give you an example of what i eat on a daily basis:
breakfast: oatmeal made with either almond, rice or oat milk (i dont like soy personally. also, i use vinalla for sweetness)
and a piece of fruit
i bring a pb &j sandwich to hold me over until i get home
i usually have either a cup of (vegan) soup or a fruit smoothie made with a banana, bubbly water and two kinds of frozen fruit
i have dinner which can be anything

If you are vegetarian, tofu would be a good source of protein. Also vegetables and fruits can be good sources of vitamins and minerals. Depending on what kind of vegetarian, eggs may also be another option for protein, although eating too many can lead to a rise in cholesterol.
Vegan- there are many meatless products such as tofurkey- which is actually a brand of vegan food made out of tofu. No eggs are allowed though.

lacto-ovo vegetarian: anything except real meat, chicken, or fish
ovo-vegetarian: veggies, fruits, grains, and eggs
lacto-vegetarian: veggies, fruits, grains, and dairy products
vegan: veggies and fruits. nothing that has ever had anything to do with animals, not even honey.
