The letters to Timothy and Titus help describe leadership qualifications in the early church. You'll also find a description of some problems in the Ephesus church in the letters to Timothy. Reading the letters are like listening to one end of a phone conversation. You'll only know what was going on in the individual churches by reading what Paul wrote to them about. There are also some extra-biblical material that describe the early church services. One is a letter from Pliny to a Roman Emperor I think.

There is a book that was considered for cannonicy (is that a word?) way back when called "Clement," or something like that. It was rejected because of some doctrinal inaccuracies, but it does have a detailed description of early church services. You can still get it today to read, but I'm not sure where.
