I have a 6" wheel of Brie cheese that has a marked expiration date of April 3. I am wondering if it is OK to eat the cheese still? I figure that the cheese is covered in mold anyway...haha

Ask yourself this.... Is blue cheese ok to eat?? It's the mold that makes it taste good.

The best thing to do is get a knife and cut the mold off the brie. Get yourself a meatloaf together and slice up that old brie and place in the center of it. It is usually a more solid piece of cheese at that point so it won't melt away in the center of that meatloaf and makes a nice little treat.

in spite of if the cheese has surpassed the expiration date, it is not that risky if it is not too long after that. You your self stated it smelled nice, in simple terms tasted slightly weird and wonderful. in simple terms drink a marvelous form of water and consume some clean fruit to chase that cheese down. do no longer subject approximately getting unwell - yet next time, please be careful, ok?

It's only safe to eat past the expiration date when you are already on the way to the hospital.
