Cornbread-chicken pot pie
Preheat oven to 400F
combine in a 2 quart baking dish:
1 lb cooked, cubed chicken breast
1/2 can of whole kernel corn (drained)
1 can cream of chicken soup
In a seperate bowl combine:
1, 8 and 1/2 ounce corn muffin mix
3/4 cup milk
1 egg
Pour corn bread mixture over chicken mixture and bake for 30 minutes. Top with 1/2 cup of shredded cheddar cheese.

This is a great recipe for a Corn Casserole that uses a boxed Cornbread Mix. Dad's Corn Casserole 3 eggs 1 (8 oz.) Onion Dip 1/4 c. butter or margarine, softened 1 (8 1/2 oz.) box cornbread/muffin mix 1/2 tsp. salt 1/2 tsp. pepper 1 can whole kernel corn 1 can cream style corn jalapeno slices, minced, to taste Preheat oven to 350 degrees. Beat eggs in a bowl adding the dip, butter, cornbread mix and spices. Stir in the cans of corn. Pour into a greased 11x7 inch pan and bake uncovered at 350 degrees for 35-40 minutes or until slightly browned and begins to pull away from the side of the pan. Serve warm as a side dish. Easy and delicisous!

Corn bread is the official go-with for ham and bean soup in the Midwest. I can't make or eat bean soup without the corn bread.

I don't care for any of the answers I've seen yet. To me the best thing to eat corn bread with is a big pot of beans, lots of bacon added, a chopped ham steak added, and a can of Rotel Tomatoes, and of course tons of onions. Place this in a bowl and top with grated cheese. Whatever kind of cheese you like best. Mexican blend is very good. Try it, and you'll love it. For seasonings don't forget to add cumin, parsley flakes , chilli powder, and garlic.
