My mother in law makes this dessert in layers: fruit, whipped cream, oreo crums. It's delicious and it involves no baking!

Decadent Chocolate Raspberry Cream Pie
2 (3 oz.) packages of cream cheese, softened
14 oz. can condensed milk
1 egg
3 Tbsp. lemon juice
1 tsp. vanilla extract
1 pie crust (graham cracker or regular)
1 cup raspberries
2 (1 oz.) squares of semi-sweet chocolate
1/4 cup whipping cream
raspberries for garnish
whipped cream for garnish
Instructions:
Pre-heat the oven to 350 degrees.
- With an electric mixer, beat the cream cheese until fluffy.
- Gradually beat in the condensed milk until smooth.
- Add the lemon juice, egg and vanilla extract.
- Mix well.
- Arrange 1 cup fresh raspberries on bottom of the pie crust.
- Pour the cream cheese mixture over the fruit.
- Bake for 30-35 minutes or until the center is almost set.
- Cool.
- In a small saucepan, over low heat, melt the squares of chocolate with the whipping cream.
- Cook, stirring often, until thickened and smooth.
- Remove from the heat and spread the mixture evenly over the top of the cooled pie.
- Chill in the refrigerator.
- If desired, garnish with raspberries and additional whipped cream.

I second the motion for trifle although my recipe is slightly different. I make it all the time for birthdays.
I use jelly rolls (the small ones about 2 inches across and 5 inches long. Cut each roll into 4 pieces and line the bottom of a glass baking dish. I use the shallow dish as it is easier to serve so everyone gets a section of the cake from the bottom. Cover the whole bottom and then spoon thawed raspberries onto each piece of jelly roll. (can also use strawberries).
The next layer is a basic cream filling (like from Boston Cream Cake) or vanilla pudding.
Finally, cover the whole thing with whipped cream.
It is not unusual for me to have to triple the recipe to meet the demand especially from my son who likes to take the extras home!

how about a chocolate ripple cake (not really a cake) and you could drizzle razberry puree over the top ( I like pepermint crisp or flake on the top of mine. No baking involved.
Choc Ripple Cake
Preparation time 25 minutes
Cooking Time
Chill Time Overnight
Serves 9+
Ingredients
300ml cream
1 tsp caster sugar
Vanilla essence
1 pack Arnott’s Choc Ripple Biscuits
Crushed nuts, grated chocolate or seasonal berries to decorate
Method
Add sugar and a drop of vanilla essence to the cream and whip until very stiff.
Join biscuits together by standing a biscuit on its side and sandwich with the next biscuit using a generous spread of cream. Continue until all the biscuits have been used and resemble a log.
Cover the log thickly and entirely with the remaining cream. Place in refrigerator for at least 6 hours to set.
Before serving, decorate log with grated chocolate, if desired.
To serve, cut cake at a slight angle to ensure alternate layers of chocolate biscuit and cream are in each slice. Serve with seasonal berries, if desired.

Here's the super easy recipe in case want to make it. You also don't need a trifle dish - I used a glass dish and it works just as beautifully! Your boyfriend will surely drool over this dessert.
INGREDIENTS
* 1 1/2 cups heavy cream
* 1/4 cup white sugar
*
* 2 (8 ounce) packages cream cheese, softened
* 2 teaspoons lemon juice
* 1 1/2 teaspoons vanilla extract
* 1/2 cup white sugar
*
* 1 (10.75 ounce) package pound cake
* 2 (10 ounce) packages frozen raspberries, thawed
* 2 tablespoons unsweetened cocoa powder, for dusting
DIRECTIONS
1. In a medium bowl, beat cream with 1/4 cup sugar until stiff peaks form. In another bowl, cream together cream cheese, lemon juice, vanilla and 1/2 cup sugar. Fold 2 cups of whipped cream into cream cheese mixture. Reserve remaining whipped cream.
2. Slice pound cake into 18 - 1/2 inch slices. Drain raspberries, reserving juice. Line the bottom of a 3 quart glass bowl or trifle bowl with one-third of the cake slices. Drizzle with some raspberry juice. Spread one-fourth of the cream cheese mixture over cake. Sift one-fourth of the cocoa over that. Sprinkle with one-third of the raspberries. Repeat layers twice. Top with remaining cream cheese mixture, whipped cream and sifted cocoa. Cover and refrigerate 4 hours before serving.

Sensuous Chocolate Truffles
1 (16-ounce) container chocolate frosting 3/4 cup powdered sugar, sifted 1 teaspoon pure vanilla extract 1/2 cup unsweetened cocoa powder Line 2 cookie sheets with parchment paper. With a hand mixer, beat frosting, powdered sugar, and vanilla in large bowl until smooth. Using a tablespoon measuring spoon or a 1-ounce cookie scoop, form into balls and place on cookie sheet. Dust truffles with cocoa powder. Cover and refrigerate truffles until ready to serve.

fruit pizza with a sugar cookie crust, then a mixture of cream cheese and something I can't remember and fruit on the top. Oh, you could always try fried ice cream (I think Breyers makes it) - if you went the Breyer's route, you could add some of those vanilla sugar wafers like the restaurants do. It's a shame that he doesn't like cake!
