Planes fly all of the time. When you hear of a "redeye" that is a flight that travels overnight. Alot of cargo is transported overnight as well. There are some airports that have curfews in place to please the people who live close to the airport. At those places, you will not see many, if any, airplanes after the curfew.

Aircraft are in the air overhead all the time.

However, most of your passenger transportation happens during the time between 6am and 11pm. Obviously there are flights outside of this time, most notably the red-eyes that fly overnight usually on west to east routes (leaving at night to arrive in the morning.)

A lot of your shipping happens at night. Companies like UPS, FEDEX and others fly your packages overnight and then drive them the rest of the way in the light.

Airplanes can fly anytime if they are equipped for night operations, (some vintage aircraft and experimental may not have electrical). Most pilots can fly at night, but not all are able to do so.

In general, aviation is available 24/7.

At any given point in time there are thousands of airplanes in the air. Wherever it is night time, this number is of course decreased. But flying is allowed 24/7, in general. There are of course some restrictions, where applicaple.
