It's not that chapters and books are missing from the Bible, it's that the Church had to choose which ones to include.
Most of the books "left out" were excluded simply because they were ambiguous or contained text which might compromise the pure doctrine of Christ.
Let me give you a practical example. Suppose you were writing a book about your best friend and wanted to use some firsthand accounts. Suppose you came across a letter someone wrote to your friend that said "I know you were cheating on your wife." Suppose that you knew with 100% certainty that your friend had never done such a thing. Would you include that letter in your book? Of course not! It would contradict your friend's character and throw your readers into confusion. They would question your descriptions of him.
That's why the Church did not include everything the Bible that had been written about Christ.
By the way, I would NEVER use the history channel to research religion. They are bias and uninformed. Who would know better about the history of the early Church than the Catholic Church? She was there.

When learning about different religious faiths you have to read a lot of different points of view....a lot of different theologians....a lot of different history books, etc.
It's not something you "get" in a book or two. Theologists study for years and continue to learn all the time.
Most of us just have an overall view about 5-6 religions.

Well you can never learn every thing. Specially when it comes books that might have been altered over the years.
You might want to get a membership for a local library and start there or google it online :)
hope that helps.

The Bible is here for a reason and beneficial to us. You need to ask yourself if you will trust what imperfect men have claimed or trust that God can preserve what is necessary for us to know him and follow him correctly. The only way you may be able to settle it within yourself is to take the time to study the bible with someone who knows how to teach it.

Get thee out into the field and dig... thou shalt learn and perhaps discover thou more than hast ever been discovered yet.
Actually it wasn't "one" book, but, theoretically, parts that were circulated by various Christian groups. Nobody got an idea to lump anything into one book until the winning party (now called Catholics) got a hold of things and when they did so the picking and choosing began to further a previously-agreed upon, male-dominant agenda.

To find a Church that teaches God's truths, you indeed need to do research and study in order to find your answers. You should be commended for such a task. Many relgions teach truth, a form of it, but not the total truth. My recommendation regarding these questions you have about the Bible may be answered if you were to study Mormonism. You may find some answers there.

Stick to the King James. The King James came to be divinely, for English speaking readers.
This is a deep subject for more information you will have to write me.
God's Word should be studied, not religion.

You can't just study one religion to study all religion! There's more to it than the Christian holy bible.
