Can't go wrong with meatballs, meatloaf, and tacos. Empanadas are a good alternative to tacos. I'm not sure what "the same thing" is to you, but if you mix the ground beef in a mixer with salt, pepper, and small frozen blueberries, its a really healthy and juicy burger. It sounds weird and out there, I know, but I would bet you anything you will love it. You don't taste the berries when it cooks, but it adds so much flavor, texture, and nutrients to a normal burger. Really though, you should never get bored of ground beef because its crazy versatile.

heres a recipe for vegetable soup and you could also make dirty rice which is hamburger with rice,onion,and mushrooms
jenn's "homemade" vegetable soup
The only non-canned vegetable i use for this is celery, and only if
it is on hand. If its not in the refrigerater i dont use it at all.
The chili powder and taco seasoning makes this stuff rock, and its
basically the only way i can allways get my youngins to eat thier
vegetables. It also cooks up in just one pan.
Brown 1 1/2-2 pounds of ground beef in Your largest stockpot. After
the meat begins to cook and You have drained the grease off a few
times, add in one or two packagees of taco seasoning according to the
directions (with the water) At this time add in some onion (i use the
dehydrated spice) and let this simmer for at least 5 minutes. Turn
down Your heat a little and pour in at least 1 tsp of chili powder
(i never measure because if i have left over salsa in the fridge it
goes in too) Pour in a large 46 ounce can of tomato juice or V8, and
start adding Your vegetables. i usually use 1 can of corn (not
creamed), 1 can of peas, 1 can of carrots, 1 or 2 cans of regular
green beans, and 2-3 cans of whole potatos cut into 1/4's. All
drained thoroughly. Sometimes i have
used fresh potatos and carrots to make this, but it takes longer to
cook when You do. Also add a can of diced tomatos with the juice if
You dont have any leftover salsa to throw in. Stir, and if there is
any room left add a little water and more chili powder. Simmer for
about 10-15 minutes and eat.
i never make this soup the same way, except for the way i cook the
hamburger with the taco sauce, chili powder, and onion. You can add
different vegetables like lima beans,celery, green pepper, more
onion, a jar of Your favorite salsa etc. based on
what Your family likes and what You have on hand. You can also leave
out the ground beef if You want to. This stuff is good and easy.

Tater Tot Casserole (kids will love it)
1 bag of Ore-Ida tots
1.5 lbs ground beef
Velveeta cheese cut into small pieces
2 cans of cream of mushroom soup
pepper
onions and green pepper chopped(optional)
Brown the meat and drain. Mix cream of mushroom in with meat use 1 can first then add more if you want (to taste) Season with pepper and onions and green pepper if you wish
In a 9x13 casserole dish:
Layer first the meat mixture then make a layer alternating cheese and tots in rows. They don't need to touch and the rows should be spaced apart otherwise it's too much.
Add another layer of meat then more cheese and tots and finally meat again.
Bake at 350 for 40-55 mins until done
Let sit for 5 mins to cool and thicken
Enjoy...
You can't really mess this up. I gavea bad description but I can't think of a better way to do it. Eventually you will make it your own. My sons (9 and 1 ) love this.

Italian Hamburger Deep Dish
1 pound lean ground beef
1 teaspoon salt
1/8 teaspoon pepper
1 garlic clove, finely chopped
2 2/3 cups water
2/3 cup milk
1/4 cup butter or margarine
1 teaspoon salt, if desired
2 tablespoons instant minced onion
1 teaspoon dried oregano leaves
2 2/3 cups Betty Crocker® Potato Buds® mashed potatoes (dry)
3 to 4 medium medium tomatoes, sliced
4 ounces mozzarella cheese, shredded or sliced
1. Heat oven to 350ºF. Grease rectangular baking dish, 11x7x1 1/2 inches. Cook beef, 1 teaspoon salt, the pepper and garlic in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain.
2. Heat water, milk, butter, 1 teaspoon salt, the onion and oregano to boiling in saucepan. Remove from heat. Stir in dry potatoes just until moistened. Let stand about 30 seconds or until liquid is absorbed. Whip with fork until as fluffy as you'd like. Spread half of the potato mixture on bottom of baking dish. Layer with beef and half of the tomatoes. Top with remaining potatoes and tomatoes; sprinkle with cheese.
3. Bake uncovered about 30 minutes or until hot and bubbly.
High Altitude (3500-6500 ft) Bake about 35 minutes.

My mo made this when I was a kid, and i loved it, and it still tasted great heated up the day after.
1 lb ground beef
1 can cream of mushroom soup
1 can french cut green beans
Some frozen tator tots
shredded cheese
brown beef and drain fat, put in medium size cassarole dish, layer on top of beef the green beans, and then the cream of mushroom, top with layer of frozen tator tots, srpinkle cheese on top
back for approx 1 hour at 350 degrees.
OR
Hobo Stew
brown 1 lb beef, add in 1 large can veg-all vegetables, i can tomatoe sauce. warm.
them put in cassarole dish, top with cut-up canned biscuits and shredded cheese, bake for about 30-45 minutes or unitl the biscuits are done. (we use the generic small biscuits, they work better than the large, fluffy ones)

Ground Beef Stroganoff:
½ day 20 min prep
6-8 servings
2 lbs ground beef
2 medium onions, chopped
2 cloves garlic, minced
1 (4 ounce) can sliced mushrooms, drained
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 cup beef bouillon or consomme
3 tablespoons tomato paste
2 tablespoons flour
3/4 cup sour cream, mixed with the flour
1. Brown ground beef in large skillet; add onions, garlic and mushrooms.
2. Saute until onion is golden brown.
3. Put in Crock Pot with all remaining ingredients except sour cream and flour.
4. Stir thoroughly.
5. Cover and cook on low 6-8 hours (or on High 3 hours).
6. Stir in sour cream and flour 1 hour before serving.
7. Serve over hot buttered noodles or rice.

Try one of my favorites sweetie, it's easy and tasty. Take a 2 quart casserole, peel and slice a large potato in thin slices, open 2- 6 oz cans of tomato sauce, pour a little sauce in the bottom of the casserole put sliced potatoes in in a layer, a little more tomato sauce a little salt and pepper, then a layer of ground beef that has been browned and drained a little more tomato sauce a little salt and pepper, then a layer of thinly sliced onions a little more salt and pepper, a layer of thinly sliced celery a little more tomato sauce and salt and pepper, finally a layer of thin sliced green bell peppers the rest of the tomato sauce and salt and pepper. Preheat oven to 400 degrees, bake covered tightly (I used aluminum foil not the casserole lid) for 1 hour. I like to serve it with fluffy buttermilk biscuits....try it yum-o:) I call it 7 layer dinner

MEXICAN MANICOTTI
1/2 lb ground beef
1 c. refried beans
1/2 teaspoon ground cumin
8 manicotti shells, uncooked
1 cup. picante sauce
1 cup water1/2 cup shredded Monterey Jack Chees
Garnish: additional picante sauce, sour cream, chopped tomatoe, lettuce, green onion, sliced black olives
Combine ground beef, beans and cumin; mix well. Fill uncooked manicotti shells with mixture; arrange in glass baking dish. combine picante sauce and water; pour over shells. cover dish with vented plastic wrap and microwave on high for 10 minutes. Using tongs, turn shells over and rearrange them from center to outer edge of dish. cover again; microwave on medium at 50% power for 18-20 minutes, rotating dish after 10 minutes. Sprinkle with cheese; uncover and let stand 5 minutes. Garnish as desired with sour cream, picante sauce, tomato, lettuce, olives and onion. Makes 4 servings

Taco bake.
1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
1 lb. ground beef
1 pkg. (1-1/4 oz.) TACO BELL HOME ORIGINALS Taco Seasoning Mix
3/4 cup water
3/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
1-1/2 cups KRAFT Shredded Cheddar Cheese, divided
1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
PREHEAT oven to 400°F. Prepare Dinner as directed on package. While Macaroni is cooking, brown meat; drain. Add taco seasoning mix and water to meat; simmer 5 min.
STIR sour cream into prepared Dinner. Spoon half of the Dinner mixture into 8-inch square baking dish; top with layers of the meat mixture, 1 cup of the cheese and remaining Dinner mixture. Cover.
BAKE 15 min. Top with salsa and remaining 1/2 cup cheese. Bake, uncovered, an additional 5 min. or until cheese is melted.
