or can I just send a letter to the pastor of my local congregation asking to be removed from the membership/mailing list?

You can call the church office and tell them that you are no longer an active member. They will list you as inactive and will probably stop sending you mailings, though you could specifically request that just to be safe.

If you are now attending another church, they can either transfer your membership or remove you entirely--the logistics of that probably depend on which chuch you've started attending.

A letter will be sufficient. If you were Baptist, though, you'd need a death certificate.
