I used to use Tabasco, until I discovered Louisiana Hot Sauce. Much much better. And in a pinch I have a bottle of Frank's for a substitute. Both make some excellent buffalo wing sauce!

Boar's Head Jalapeno Sauce is our current favorite, but I've got a whole pantry full of hot sauces. Tabasco seems kind of pedestrian to me these days.

It depends on what type of food you're eating. Tabasco is a pretty good standby (esp the new habanero variety). However, if you're eating something more Caribbean, you might try Matouk's if you can handle it--it's very hot.
