actually you should pronounce it "ma'am" when you mean it as a formal way of addressing a woman..."madam" can also refer to a woman who runs a house of prostitution so if you pronounce it as the French do it might lead to a misunderstanding...in writing, for example in a letter you do write "Dear Madam" or before a surname you write "Mrs."

Queen of the Rÿche is absolutely right in her reply but I would qualify it slightly. The formal pronunciation "ma'am" is usually reserved for ladies of high rank - for example, the queen, a magistrate, or, in the armed forces, a lady officer of a higher rank. The standard everyday pronunciation as a formal term of address to ladies, for example in shops or restaurants, is "madam" (with the d pronounced, and with the emphasis on the first syllable). Madam (with a capital M) would also be the standard way to write it.
