Looking for some easy, or should I say relatively easy, dim sum cook books.

I suggest going to your local library, Borders or Barnes & Nobles and checking out their dim sum cook book selections first hand to see which books will suit your needs best as far as types and varieties of dim sum, ease of recipes...

Why buy a cookbook just yet? Here is a page with over 50 dim sum recipes to try. Once you get the hang of things you might then think about adding a cookbook to your collection.

As both a cookbook collector and person who sells cookbooks, I would suggest checking out this book:
Essentials of Asian Cooking by Corinne Trang
It's a great starting point for learning Asian cuisine.
Another little cookbook I love is Chinese Cooking by Rose Cheng and Michelle Morris. The Rose Cheng book is much cheaper, especially on eBay, but I suggest getting both books once you are ready for them.

Dim Sum is actually Chinese-cantonese food. Think appetizers...mostly they are steamed meat or seafood, but there are a few items that are fried, baked, or pan fried. Eggrolls is an example of a dim sum. Har Gow (shrimp dumpling), Shuimai (pork and shrimp dumpling), chicken feet, bbq pork buns, lotus bean paste buns are some common dim sum items.
