I guess the little Mexican girl is a little defensive..Mole would not be a fun dish to eat at school it is not easy to eat a bit messy there are a several fun dishes suggested just keep it fun

empanadas de calabasa
(I N G R E D I E N T S)
Pumpkin Filling
1 (15 oz.) can pumpkin
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon, optional
1/4 teaspoon ginger, optional
1/8 teaspoon cloves, optional
Empanada Dough
1/3 cup water
1/4 cup sugar
1 teaspoon salt
2 (1/4 ounce) packages dry yeast (4 1/2 teaspoons)
1/8 teaspoon baking powder
2 generous pinches cinnamon
3 cups flour, divided in half
generous 3/4 cup vegetable shortening
I N S T R U C T I O N S
For filling: Mix ingredients together and set aside.
Preheat oven to 350 degrees F. Combine water, sugar, salt, yeast, baking powder, and cinnamon. Using an electric mixer, gradually blend in half of the flour. Add shortening and thoroughly mix, then gradually blend in remaining flour.
Divide dough into 4 equal parts, ten shape each into 4 dough balls. Slap the dough balls between the palms of your well-floured hands until somewhat flattened, then roll on a floured surface until circles approximately 4 inches in diameter and 1/8 inch thick.
Put about 1 1/2 tablespoons of filling in the center of each circle, fold over, and seal edges by pressing lightly with a fork on both sides.
Bake on greased cookie sheet until golden brown, 18 to 20 minutes (watch carefully; they can burn quickly).

Pastel de Tres Leches (cake of three milks)
1-½ cups All-purpose flour
1 teaspoon Baking powder
½ cup Unsalted butter
2 cups White sugar (divided)
5 Eggs
1-½ teaspoon Vanilla extract (divided)
1 cup Milk
½ of a 14-ounce can Sweetened condensed milk
½ of a 12-ounce can Evaporated milk
1-½ cups Heavy (whipping) cream
Preheat oven to 350F degrees. Grease and flour a 9x13-inch baking pan.
Sift flour and baking powder together and set aside. Cream the butter and 1 cup of the sugar together until fluffy. Add the eggs and 1/2 teaspoon of the vanilla. Beat well. Add the flour mixture to the butter mixture, 2 tablespoons at a time, mixing well until blended. Pour batter into prepared pan. Bake for 30 minutes.
When cake has finished baking, pierce it in 8 or 10 places with a fork or skewer, and let it cool. Combine the whole milk, evaporated milk, condensed milk and liqueur and pour over the top of the cooled cake. Refrigerate for at least 2 hours before serving.
Whipped Cream Topping: When ready to serve, combine the whipping cream and the remaining 1 teaspoon of vanilla and 1 cup of sugar, whipping until thick. Spread over top of cake.
Because of the milk in the cake, it is very important that you keep the cake refrigerated until ready to serve. Serve chilled.

sopapillas are yummy they are essentially flour pastries that are fried and then drizzled with honey. If you are not able to make them yourself Wal Mart has a box of mix in the Latin aisle.
Also yummy and easy to make are Bunuelos. For this you would by the thinest flour tortillas you can find and fry them in oil until crispy. Then you coat them completley in sugar and cinammon.

If it's hot where you live you could make Aguas Frescas I know they aren't dessert but they are so delicious. Cantaloupe and Strawberry are my personal faves. They are easy to make google it or there are envelopes at Walmart (it looks like a KoolAid envelope) they even have Horchata they are essentially fruit juice (ie cantalope) sugar and ice.

Bakeries are starting to sell "conchas" [the shell bread with the colored sugar on top] more...churros are ALWAYS good...try pan de muerto [dead bread]
Ingredients:
1/2 cup butter
1/2 cup milk
1/2 cup water
5 to 5-1/2 cups flour
2 packages dry yeast
1 teaspoon salt
1 tablespoon whole anise seed
1/2 cup sugar
4 eggs
In a saucepan over medium flame, heat the butter, milk and water until very warm but not boiling.
Meanwhile, measure out 1-1/2 cups flour and set the rest aside. In a large mixing bowl, combine the 1-1/2 cups flour, yeast, salt, anise seed and sugar. Beat in the warm liquid until well combined. Add the eggs and beat in another 1 cup of flour. Continue adding more flour until dough is soft but not sticky. Knead on lightly floured board for ten minutes until smooth and elastic.
Lightly grease a bowl and place dough in it, cover with plastic wrap and let rise in warm place until doubled in bulk, about 1-1/2 hours. Punch the dough down and shape into loaves resembling skulls, skeletons or round loaves with "bones" placed ornamentally around the top. Let these loaves rise for 1 hour.
Bake in a preheated 350 F degree oven for 40 minutes. Remove from oven and paint on glaze.
Glaze
1/2 cup sugar
1/3 cup fresh orange juice
2 tablespoons grated orange zest
Bring to a boil for 2 minutes, then apply to bread with a pastry brush.
If desired, sprinkle on colored sugar while glaze is still damp.

Hola, I am Mexican living in Mexico and first of all thank you for celebrating our Day of muertos.
Second some posts above left me terrified, please ignore them because they just a mere stereotype.
Flan and biscochos are Spanish desserts, sopapiwhat? (junk food from outer space), Pastel de tres leches (where is the Spanish birthday party), Pepper cakes (what is that!!!), empanadas de calabaza (pastry for Halloween), fried tortillas sprinkled with sugar (disgusting), souffles (french), custard (amusing) ARE DEFINITELY NOT MEXICAN FOOD. Sorry.
Usually that day food is prepared as an offering for our departed family and we gather to remember them because we think those two days they return to us (we do not throw a party).
If you are a good baker try the recipe that Star* gave you, definitely Pan de Meet (Dead bread) is something that cannot be missed, buy sugar calaveras (always pair numbers), offer fruit like platano macho (large bananas), mandarins, green pump kings, sugar canes and yellow apples. Also we offer Tequila or Mezcal. Try doing coffee with large cinnamon sticks (add them when boiling the water) and brown sugar.
If you want go pro make MOLE (en pasta, the easy way, if I give you the grandma recipe you would probably faint) and here is the recipe:
Ingredients:
12 chicken pieces
8 water cups (1.920 litros.)
1 branch of celery
1/2 onion.
6 chicken soup cubes
350grs. Mole en pasta
2 spoons of toasted sesame
Boil the chicken with celery, onion and the cubes (About 20 mins.).
Remove the chicken and strain the chicken soup, separate a cup of chicken soup.
Dissolve all the Mole in a bowl with the cup of chicken soup.
Put the chicken in a saucepan add the mole and more chicken sauce (mole must end as a thick sauce) and let it boil 5 mins.
Serve on a flat dish and sprinkle over sesame also cut a large onion and separe the rings and put them over the mole. (We usually eat this dish with hot corn tortillas ).

You want something really simple? Then make buñuelos...simply fry a tortilla and then sprinkle sugar and cinnamon on it. It will be totally easy to make for your class and very yummy. Good luck!
