Homemade mini egg rolls.

The egg roll wraps can be found in most supermarkets. If they only have the full sized ones then cut them in half.

You can put anything inside them. I'm fond of bay scallops but use your imagination, it's hard to go wrong. Then wrap, seal and deep fry. Then put them on a rack in the oven at 200F until you serve them or freeze them and reheat the next day.

Try to make things that can be prepared the day before. Cook as little as possible on the day of the party, you'll enjoy the party more.

Used grilled slices of eggplant as crackers for vegetable hor dorves.

Quartet pita bread with a spicy chick pea stuffing and almost anything else. The chick pea stuffing acts as a glue to hold the little sandwich together but ham, 2 inch lengths of asparagus sauteed in garlic, dried tomato -once again be creative.

Different type of salad spreads (ham, turkey), chicken wings with different flavors. Fondue is always a big hit anywhere and at any gathering. Get a few fondue machines, one for chocolate and an other for cheese. Subs are always good...cut them smaller for enough to go around. Or use a Kaiser roll. Little Smokey sausages in BBQ sauce are great.

Tea Eggs! These are an ancient chinese recipe that creates a marbling effect on the egg white and would be stunning on a buffet, cut into halves and displayed on a bed of shredded lettuce. These take a long time to make in terms of hours but there are only short bursts of activity. You have to make a strong dark steeping liquid using tea, soy sauce and star anise, hard boil the eggs then gently crack them all over. OOh I love buffet!

Get loads of pork spare ribs (they are quite cheap!), bring them to the boil and then simmer for an hour and then marinate them overnight ideally or as long as you can in:

ketchup
splodge of bbq sauce
bit of honey
splash of soy sauce
chinese 5 spice
garlic

Then bake in a medium oven for about an hour and throw them all in a bid serving dish for people to help themselves!

You don't have to boil them first if you don't want to but I find it makes them more tender. If you don't just bake them longer on a lower heat! Enjoy the buffet!

How about cutting viennas into bitesize , cheese into bitesize, some tiny pickled onions , Take toothpicks stick on piece of vienna, cheese, pickled onion and whatever else you fancy and stick it into an orange till the orange resembles a pin cushion. Always goes down well. You can use gherkins, pieces of bacon , olives anything.:))

turkey, ham, sandwiches are good! Use flour tortillas, put lettuce, cheese, and cream cheese or mayo, roll up and cut into pinwheels, or buy them at Costco! Also serve vegies and dip to compliment, cheese and pinapple. and some different fruit, like stawberries, kiwi, etc. mini quiches, are easy also. Have fun, and good luck.

here r some ideas -
1. first of all lots of different types of sauces on the table like bbq sauce , tomato sauce ,mustard , mayo etc

2.keep some French fries

3.keep lots of vegetables and bbqued meat and chicken pieces and stuff and keep lots of differen types of dips wid them .

4. u can make wild mushroom or vegetables canapes.

5. u can make quiches.

6. u can make little hamburgers.

7.u can make salads and keep them in small bowls with a fork.

8. keep lots of drinks , popcorn and chips every where.

9. u cake keep small cup cakes.

10. u can put 2 or 3 types of raw vegetables on tooth picks (like carrot , cucumber , tomato , radish ,capsisum , feta , cottage cheese etc etc) on the table with a dipping sauce

11. u can serve jelly in small glasses topped with fresh or whipped cream

12. u can chicken or tuna sandwiches .
