Back in my bad-old Carnivore days, I used to love Nuoc Mam sauce. Oh well.
I think you should probably explain to your exchange student, gently ; "We're Vegetarians and don't allow meat products in our home."
Part of the whole cultural exchange thing is that the students learn about and participate in cultural things with their host family.

When you agreed to take in an exchange student, did you make it known you would require a vegetarian? If not, you need to respect her diet. You cannot expect someone to travel into a new country and then lay down unexpected rules once she is stuck in your home.
If you did make it known that you require a vegetarian student, she should know vegetarianism excludes fish. Politely explain to her that the fish sauce goes against yours and your family's beliefs. Perhaps ask if she can keep it in a Ziploc bag in her room.

I am not vegetarian and I love Asian food, but I hate fish sauce with a passion. Maybe instead of telling her it smells bad, talk to her about your dietary practices and how the sauce conflicts with them. Suggest she get rid of it herself and see how she likes her food without it. I don't know where you live or how diverse it is there, but here there are a lot of ethnic grocery stores where one can get fish sauce cheaply. Or you can spend more and get a smaller bottle at a large-chain grocery store, rather than keeping the old funky bottle she brought with her. Hope this helps.

Why do you need to get rid of it? It's pretty simple to just not use it.
It would be fairly inconsiderate of you to ask the exchange student to stick to a vegetarian diet just because you do...After all, I have to assume that she's not asking you to eat the fish sauce.
Perhaps the best thing to do would be to go to the cultural market near you, and buy a new bottle...if it's clean on the outside, and has a good lid on it, you shouldn't notice the smell.

Just let her know kindly that it bothers you. Then either have her put it in an air tight container, and only use it when you are not around. If that is not feasible, than try to understand that all cultures are different, and we all have different taste. Be kind to her choices. If you give her respect, and a little space, she will have to do the same for you.

I'm a veggie.. But as I wish others to respect me for it, I also respect meat eaters and never give them any grief about it... We are who we are.. and they are who they are... I'm sure she feels bad enough being in a diff country, no family or friends around... Maybe not a lot of people that speak her language also.. For me.. Food is tied in w/ a lot of memories of my family.. It's harsh to ask her to toss it.. Just live w/ it. You knew going into it that your exchange student was going to be diff than how you are.. diff cultures.. I'm surprised that this bothers you so much.

I think it may be a bit rude to ask her to get rid of it. Even though you do not like the smell not everyone has the same taste. Let her keep it and try and ignore it if you can.

stage a robbery at your house. make it seem like ur house got broken into and stuff got stolen. the fish sauce just "happened to be stolen too". sound good? it'll work.
