What can I do with feta cheese? just use them for salad? Any other way I can use feta cheese? cold dish and hot dish. TQ

I don't have a recipe for you but spanakopita-phyllo pastry layered with feta and spinach then baked-is delicious. I make a dish where I stuff chicken breasts or fish filets with feta mixed with spinach and garlic,topped with lemon and herbs-don't follow a recipe on that one either. These are just some ideas for you.

Make a most delicious dip to go with crackers. It is really quick and turned out perfect the first time I made it and every time after that.

The recipe says to make individual packages of hot feta dip. Too much trouble. Just put it in small pyrex dish and bake covered with foil. It looks good and tastes delicious. Very Greek

Fry up some spinach and garlic put it aside.
Start making an ommlette (3 eggs) when ready add spinach and feta cheese.

GREAT ommlette.

GREEK SALAD MY WAY :

Diced cucumber
diced tomatoes
feta
kalamata olive
sliced onions (optional)
spring mix
salt & pepper
Olive oil
balsamic vinegar

Put all the ingredients in a bowl and toss

feta cheese is really good in cheese and spinach triangles with puff pastry, good as an alternative to mozerella cheese on pizza for lower calories and good with eggplant and sundried tomatoes on brushetta toasted for lunch.

Cold: in any salad, diced, especially over diced tomato with some olive oil and cucumber and whole meal crackers (this is cretan "Dakos")
Hot: diced among uncooked shrimps, pour some tomato sauce over them and place in hot oven till shrimps become white. (this is shrimp "saganaki")
