Marinate your chicken breast in fat free Italian dressing, then bake. I cut the breast like a pita pocket sorda, and then squirt dressing in there while it's baking, oh my is it good!
Italian dressing is about the only one, to me, that you can not tell the difference, that it's fat free.
I work night shift too, sucks trying to plan what to eat, who wants to eat the same thing twice in 24 hours, ALL THE TIME? Every once in a while is okay. Just like with Easter, I have had ham 3 of the last 4 times that I have ate, don't get me wrong I love ham, but enough is enough!:)

Wash chicken pieces well. Sprinkle generously salt, pepper, and garlic powder on both sides. Place in large roasting pan. Add large sliced onion, sliced carrots, and sliced peeled potatoes. Sprinkle garlic powder, salt and pepper on vegetables. Spray all with Low fat Spray margarine and cover with aluminum foil. Cook at 400 degrees for 18 minutes, turn chicken, stir veggies, spray with margarine, and cover again. Cook for another 18 minutes. Turn again and uncover. Cook for 7 minutes. Turn again and cook uncovered for 7 more minutes. Absolutely delicious. Times will depend on size of chicken pieces and vegetable slices. Make large slices of veggies when cooking large pieces of chicken.

Slice up (strips or chunks) and pan-fry or grill or bake or whatever some chicken breast with some rice or pasta and chunks of carrot, zucchini and snow peas.
I love that! And it's very easy, you can freeze it or just put it in the fridge.
