That was the exact right thing to do. I bet they were really touched. Sending a thank-you note after someone has you over for dinner isn't sucking up, it's good manners. If you're going to have dinner with them regularly, I wouldn't write a thank-you every time, but I would bring a little gift like flowers or something. It's nice to give a little "hostess gift" when you are a guest.

Write what you really feel. It doesn't matter if it is all over the place the only thing that will matter to them is that you are appreciative and classy. Write the Thanksgiving and birthday gift thank you in the same note. All you really have to express is how much you appreciate their generosity both as a host and hostess for Thanksgiving and the lovely card and gift certificate they gave for your birthday. They sound like really nice people.

Don't second guess yourself at all! It was a really thoughtful gesture that anyone should appreciate, especially a boyfriend's parents. It was completely appropriate and a great thing to do. There's nothing wrong with showing that you are thoughtful and believe in manners.

ok, a thank you note was a bit much, it would have been a lot better if you would have simply called them...by sending a note it seems like your scared of them , plus that's so formal and cold.......they arent your business colleagues or a boss your trying to suck up to...they you boyfriends parents, you wanna get to a level where your comfortable with them, and that letter just made it kinda weird.
