off - to let liquid evaporate. Set to med/high and watch pot so that you don't let all the liquid go. General rule is to reduce liquid by half.

It is cooked down with the lid off. Depending upon what you are doing either put the lid on or leave it off.
If you want to reduce the moisture to make a sauce leave the lid off.

Lid off so that it can evaporate - if you keep the lid on, you replenish the liquid from the steam.
