During passover Jews cannot eat self raising products in memory of the rush to leave Egypt. There was no time for the bread to rise, so they ate flat bread.
During the middle ages many other grains were stored in the same European wharehouses as these grains. so European Rabbis added a prohibition agains rice, corn, beans and other legumes because they were comingled in the same storage. However, Jews of non European descent are not bound by that later prohibition.

the primary distinction is leavened bread type things.
for example there can be cakes and muffins and such. ... but they can't be yeast-type ones.
there can be pasta, but it has to be specifically made...
like for passover theres special flour which is called Matzo Flour. which is basically... you take flour, mix it with water to make matzos... then you grind them back into flour.
it sounds silly, but the real point of it being to entirely annihiliate any yeasts or wheat germ or whatnot.
but to the point of the thing... "self raising agents" is probably a good way to generalize it. I can't think of any passover foods that involve beans or rice or anything...

well you eat matzots, potato starch and theres the seder you eat harrosets you cant have anything with flour 1- no flour 2-olive oil no other kind of oil you can also use cotton oil. you can eat vegetables. meat, sheese everthing but without flour. go to a jewish libaary and they do sale books on pesah eating laws like what to eat because its a mayor issue also ask some one who is a religious jew or a rabbi they will exspalined everthing to you about what products you can eat in pesach

No leavened bread, for European Jews, no grains that were commonly stored with breads... Someone on here in another question implied that carbonation was an issue, but that is not the case.... Go to the link from jewfaq.org that the guy above me put in..
