Salmon is the king of Fish and should be treated as such. For baking I like to leave it in a fairly natural state. I wash it , and then sprinkle a little lemon juice on it and add salt and pepper to it. I Place it on an oven proof dish or metel sizzler and put about a 1/4 cup liquid around it. Before putting it in a 350 degree oven I put a drizzle of butter down the middle and then pop it in. The fillet will turn orange and be somewhat firm to the touch when done. I remove it and plate it . I dont remove the skin as i have found it adds flavor as it sets, I then pour some of the liquid from the dish around it and serve with lemon wedges. I have found this way I get a firm , moist and tasty fillet deserving of its origin. An excellent side dish with this is asparagas spears simply baked off with the same spices and in the same manner and if you start the asparagas five minutes before the fish they come out done at the same time.

Ingredients:
Coconut Crusted Salmon
* 1 1/4 cups of shredded, unsweetened coconut
* 4 x 6 oz salmon filets, skin removed
* Salt and pepper
Directions:
Caribbean Coconut Crusted Salmon
1. Preheat oven to 375 degrees.
2. Put coconut into a freezer bag. Drop in the salmon filets one at a time and toss to coat. Place on a lightly oiled baking sheet and season with salt and pepper. Bake for 15 minutes.

GREASE A PYREX PIE PLATE
salt &pepper
onion powder & garlic powder
sqirt of lemon juice
place 1/2 to 3/4 inch thickness salmon filet in pie plate
cover with saran wrap leaving small air space
microwave for four minutes on high until salmon changes color. Make a tartar sauce or eat plain.
Make sure it is done in center.

People usually make the mistake of overcooking their salmon, so, I'd use the broiler if you could. Does it still have the skin on one side? Sprinkle with salt, pepper, and baste with teriyaki sauce as it cooks. If you broil, then put your rack 4 -6 inches away from the broiler and watch closely. Baste every 5 minutes or so. Serve with pineapple rice and salad.

If you know how to fry Salmon then this will be really easy, Oven 400, oven safe skillet, Salmon S&P, Creole seasoning if you have it, 2Tbs. oil in a smoking hot skillet, sear both sides 2mins, skillet into the oven, 10mins, done!

I broil mine & it comes out beautifully.
I just squeeze fresh lemon juice over it, sprinkle it with kosher salt, pepper and fresh dill.
Broil for about 10-15.
Be careful not to overcook!
It is great with a side of wild rice!
