anyone out there have a good recipe for rice balls?

Italian Rice Balls:

1½ hours 1 hour prep
10 large balls

1 lb lean ground beef
1/2 teaspoon garlic powder
1/2 tablespoon black pepper
1 cup raw converted rice
1 cup spaghetti sauce
1 cup grated romano cheese or parmesan cheese
1 egg
1 tablespoon water
1 cup Italian seasoned breadcrumbs

1. Cook converted rice according to package.
2. Cool rice and reserve.
3. Saute ground beef, crumbling well.
4. Season beef generously with garlic powder and black pepper.
5. Combine seasoned meat and cooled rice.
6. Mix in spaghetti sauce and cheese.
7. Divide mixture into ten baseball sized balls.
8. Place on nonstick cookie sheets.
9. Chill.
10. Can be IQF frozen at this point and put into freezer bags.
11. Combine egg and water in a bowl.
12. Pour breadcrumbs into a bowl.
13. Dip each ball in egg wash and then into crumbs to coat.
14. Bake@ 350 for 30 minutes, or if baking from frozen add 15 minutes.

ITALIAN RICE BALLS

1 lb. white rice
4 eggs
1/2 c. grated Parmesan cheese
1 lb. Mozzarella cheese, cut in 16 cubes
1/4 lb. Genoa salami, cut in sm. pieces
1 1/2 c. Italian bread crumbs
Olive oil
Spaghetti sauce with meat (meat sauce)

Cook rice until sticky. Let cool. Mix rice, 4 egg yolks and grated cheese in large bowl. Form rice mixture into balls (the size or oranges) enclosing cube of Mozzarella and 2 or 3 pieces of salami inside each rice ball. Beat egg whites. Dip each rice ball in beaten egg whites and then in bread crumbs. Drizzle with olive oil and broil on all sides until well browned. To serve, split open and top with meat sauce. Makes 14 to 16.

Just had rice balls for dinner,I mix1 cup of cooked rice, with a cup of ground ham ( i put it in the processor) ,2 teaspoons of ground sage, 1 package of shredded cheese (whatever you prefer) salt and pepper to taste,make into golf size balls and drudge in beaten egg and dip in bread crumbs then deep fry for about 2 min.

You could look up "arancini" in your favorite food search engine. It's leftover risotto with cheese shoved in the middle of the ball, then dipped in egg wash and rolled in bread crumbs and fried. They're really good and fun to make.
