Simple White Cake
INGREDIENTS
1 cup white sugar
1/2 cup butter
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

Just had a flick through my cupcake book..
How about a white chocolate and macadamia nut muffin?
Serves 1/2 dozen
300g self-raising flour
150g caster sugar
200g white chocolate chips
100g roughly chopped, lightly toasted macadamia nuts
pinch of salt
4 tbso butter, melted
175 ml butter milk
1 lightly beaten egg
Preheat the oven to 175degreesC (350degrees F/ Gas Mark 4). Grease a large 6-cup muffin tin.
In a medium bowl, mix flour, sugar, chocolate chips, nuts and salt with a spoon.
In a large bowl, beat the butter, butter milk and egg with an electric whisk. Add the flour mixture to the buttermilk mixture, stirring until just combined. Do not overmix!
Spoon the mixture into the prepared tin. Bake for 25 mins. Remove tin from the oven and cool for 5 minutes. Then remove the muffins and cool on a rack.
Store in an airtight container for up to 3 days, or freeze for upto 3 months.
It was the whitest thing i could find! Hope it is what you are looking for.

Moist White Cake With White Butter Cream Icing

Ingredients:
1 (18 1/4 ounce) box classic white cake mix (I used Duncan Hines)
1 1/3 cups half-and-half
2 tablespoons margarine
3 large egg whites
frosting
1 cup vegetable shortening
1 teaspoon clear vanilla
4 cups sifted confectioners' sugar (32 oz)
4 tablespoons half-and-half
Directions:
Preheat oven to 350°.
Blend the mix, half and half, margarine, and eggs at medium speed until fully mixed.
Pour the batter into greased pans. For this recipe I used two 8-inch round cake pans.
Bake for 20- 25 minutes or until cake tests done.
Cool the cake while in pans for 10 minutes, then remove and allow them to continue to cool. After cooled then add frosting.
FROSTING: Mix shortening, vanilla, sugar (sifted), and half and half at medium speed until fully mixed. If the frosting is too thin, add more sugar, if it is to thick add more half and half.
Then ice cake to desired taste.
Top with your own choice. I topped mine with strawberry pie filling. It was PERFECT!

I usually purchase a good white cake recipe with pudding. You can use almost any yellow cake recipe, only use the egg whites instead of the whole egg. Plan on one extra white, though.
