is their anyway to make the hamburger helper potatoes stroganoff with out meat.
It calls for a pound of meat. I dont have any meant but i have two boxes of potatoes stroganoff. If i cut out the meat how much liquid should i use for one box..or two?

I agree with the first answer, you shouldn't have to change anything except for cutting out the meat. i do it with hamburger helper all the time.

What you're going to end up with is simply a potatoes with a cheesy cream sauce, which can also be used with anything. The liquid that its asking for is to make sure that the noodles get cooked and that the sauce can bind. Here are some possible additions to your mix:

1. Reduce the amount of liquid and add 1/2 cup sour cream
2. Add drained tuna to the mix and some frozen peas
3. Have you ever considered the Morningstar ground meat substitute? You put it in at the very last minute and it comes out tasting great with a texture of ground beef.
4. Chopped chicken or turkey
5. Sauteed vegetables

Why don't you just make something from scratch? It is healthier and way better for you than hamburger helper. Stroganoff is easy to make with just sour cream and mushrooms and maybe a little beef broth. Toss the sauce with cooked egg noodles and you have something homemade and not so full of sodium!

Just totally skip the meat directions.... go on to boil the water and adding the rest of the ingredients.

Same amount of water though.
