I usually have chicken-broccoli-cheddar or ham-mushroom-swiss. I'm looking to spice it up. I'm cool with most kinds of meats and veggies, I think I'd like to avoid putting fruit in the omelets for now. Grains and such are okay, as well, although I think I'd rather not have them in an omelet.

I love the omelet they make at Perkins. The hashbrowns with cheese are tucked _inside_ the omelet. And the eggs are done with all the usuals...bell peppers, mushrooms, sausage, onions. I so miss living near a Perkins.

I have an omelet most every sunday after church, except Easter. I some how got into the habbit. The very best one I've ever had, so far, was at a little cafe in Roseberg (Oregon.). I wonder if they still make it. It had some sausage and melted swiss cheese on the inside and more on the outside. It was so delicious! You can also use spinach (the canned is fine for cooking), blue cheese or even Feta cheese, chili beans, chicken. I had one in December that it was like a chicken enchilada . yum! You could do any combination, really!

I like to grill some portabello mushrooms and asparagus with olive oil, sea salt and ground pepper.
Then, once that is nicely grilled (about 10 min)..
I start to make an omelet. I place the mushroom and asparagus on 1/2 the eggs and sprinkle feta cheese over it. Then I fold it in 1/2, brown both sides, plate it and sprinkle more feta on top. Yummy

I love Onions, and Tomatoes in mine along with the ingredients you have listed. Try adding all of your ingredients into a 2 quart zipper baggie,Shake well and then put into a Pan of boiling water. In 15 minutes you take the bag out and just dump the cooked Omelet on a Plate. It makes a Perfect Omelet everytime and with little mess..

I love veggie omelets...sauteed onions and mushrooms, broccoli, bell peppers, tomatoes and pepper jack cheese...topped with salsa...YUM! I also add some diced, smoked ham on occasion or top it with some fresh crumbled bacon.

I beat the eggs in a bowl, with salt, pepper and a little bit of milk. I've been told the milk makes the eggs fluffier.

I'm hungry now!!! Nuttin' wrong with having breakfast food for dinner, right? ;-)

Tortilla Espanola (Spanish Omelet) Recipe

1/2 cup vegetable oil
4 potatoes, thinly sliced
1 white onion, chopped
4 eggs, scrambled in a large bowl
1/4 teaspoon salt
2 to 3 tablespoons extra-virgin olive oil


In a large skillet over medium-high heat, add the vegetable oil until the pan is filled halfway. Once the oil is hot, add the potato slices and onion, making sure they are well-covered by the oil; add more oil if necessary. Cook for 20 minutes until the potatoes and onions are soft. Drain the oil and combine the potato mixture with the eggs. Add the salt and mix well.
In a 10-inch by 2 1/2 inch deep nonstick skillet, add the olive oil and heat over medium-high heat. Pour in the potato, egg, and onion mixture. Lower the heat to medium-low and cook for 4 to 5 minutes, until the bottom of the omelet is very light brown. Using a flat ceramic plate, cover the frying pan and flip the omelet over onto the plate. Immediately slip the uncooked side back into the pan. Cook for another 4 to 5 minutes, until the other side is a very light brown.

Remove the omelet from the pan to a plate and cut into 4 wedges.

In Italy one of the best frittatas (which is the Italian equivalent of omelette only flat) is made with fried zucchini. Try to do an omelette with them but fry the sliced zucchini first slightly brown if you like them that way. It should be extra delicious and rather light. Alternatives: zucchini and oreganum or onion and zucchini, or even zucchini flowers when they are in season. Buon Appetito!

Wow..... the items to be added is endless!!!!! We love ham, sausage, chicken, hamburger, bell peppers, onions, mushrooms, olives (black), any kind of cheese and salsa for the final kick. I don't think there's anything that you could add that would be distasteful (well within reason).

I like to put mushrooms, onions and swiss cheese in mine topped off with hot sauce.

I made an omelet once with cut up bell pepper, onions, cheese, mushrooms, and steak and a little bit of salsa to top it off. It was so good.
