Here's the recipe I always use for swedish meatballs:

1 pound ground beef
1 1/2 c. dried bread crumbs
1/2 c. dry sherry
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 1/4 cups heavy cream
1 10.5 oz.can beef consomme
1 bay leaf

In a large bowl combine meat with next 4 ingredients and 1/2 cup of the cream. Shape into small meatballs and brown in a skillet in hot oil. Drain oil and wipe skillet clean.
Melt 2 tablespoons of butter in skillet and stir in 1 tablespoon of flour until well blended and smooth. Wisk in undiluted consomme and the remaining cream. Heat to boiling, stirring constantly. Add meatballs and bayleaf, simmer covered 15 minutes.
Serve over buttered egg nooodles.
