Quick, Easy -N- Fast Parmesan Rice Recipe
2 T. butter
3 C. cooked rice
1/2 oz. dried mushroom blend, rehydrated and chopped
1/4 C. frozen petite peas, defrosted
1/2 C. grated parmesan cheese
Melt butter in large skillet over medium heat. Add rice, mushrooms and peas; cook until heated through (about 5 minutes). Add parmesan; stir until well blended.

Pilaf!
Put 1 tbsp butter in a pan. Break up into small pieces about 1/3 cup uncooked spaghetti and put in to brown. When the pieces are brown, add rice (or quinoa, yum yum) and some chicken stock, however much for the liquid to be the same amount of water you'd use to cook the amount of rice (or quinoa) you're adding, according to box directions. (In other words, if the box calls for 1 cup rice and 1 cup water, add 1 cup rice and 1 cup chicken stock.) Add some herbs like basil or rosemary and some pepper. It's done when the rice is cooked and the liquid is pretty much all absorbed.
To go with fish, top with a squeeze of lemon juice when serving.

I always boil my rice for 15 minutes, stir in some cooked (frozen) mixed veges.
With the fish I would use smoked Hoki or similar poach in milk and when cooked remove and flake
Use the milk to make up a parsley sauce, return fish to reheat and serve over a pile of rice and vegetables

Honestly, if I cook fish I use simple, plain white rice. It goes very well with the ocean taste, especially if you make the fish with a sauce.
