Is measuring “Supply & Demand” (economics) really just measuring how much others covet your stuff?

Not really. It's more of a measure of how others need what you have. S&D is used on almost everything, including foods (which we all need to live).

I try not to covet, but I do fall short of the glory of God and covet things like a better job or a better house.
