Traditionally...Shepherd's pie! My mom didn't cook lamb but she did make Shepherd's pie with hamburger. Layer chopped lamb on bottom of casserole dish. Second layer is corn (or your fav veggie). Spread mashed potatos on top and bake in oven til hot. Yummy comfort food!

Well sandwiches or wraps are the most popular use for leftover trimmings. You could prepare an elaborated salad with baby spinach, mint, and lamb... you could have a small handful of raspberries on the side with a fruity dressing... I would have a raspberry vinagertte. I am only 14 years old so I don't really know much right now... I didn't have lamb for easter through!

My Mum, in the 50's and 60's would make rissoles with leftover lamb. She minced it and mixed it with beaten eggs, chopped onions and mashed potatoes. This was a really tasty Monday meal when shallow fried, we added home made pickles on the plate and some potatoes, mashed or boiled and sometimes some baked beans if we were a bit flush with the cash. Strange to think we were poor but had a joint every Sunday that was a cold cuts or rissoles on Monday and Tuesday and a stew on Wednesday with butcher's sausages on Thursday and fish, usually fresh from the sea off Dorset, on Friday's. Saturdays was a catch what you can day, usually sandwiches. We always had fresh veg from the garden or Fred's allotment. He swapped spare veg with the fishermen neighbours. Fresh crab and lobster every day in the season, fresh mackerel and dog fish. Loved the rossoles though!! Thanks for stirring the memory, Stacey.

Make scotch broth.....boil the lamb leg to get all flavour out....cut meat off bone.and cube small, keep water.....add chopped onions, beef stock or bouillon to taste and some pearl barley, simmer until barley is cooked then add some carrots and peas...season and enjoy!! Classic Scottish soup....

Gyros pitas is all I can think of.... I"m sure there must be some type of lamb stew out there, hu? I have no clue!
Make some tzatziki, slice up cukes and tomatoes, and serve your lamb thinkly sliced in pita pockets!

Cut it into small pieces and make a stew.Just put the rest of your leftover veggies in with a couple of potatoes and there you have it.Hope this helps.

Slice it, and you can either eat it with mayo or Dijon mustard and cornichons (little vinegar pickles) or cocktail onions, or with a salad (baby spinach or spring mix). Make a vinaigrette like this
red wine vinegar
peanut or sunflower oil
Dijon mustard
salt & pepper
All mixed together
Bon appétit

Chop your lamb and saute with cabbage, diced carrots and celery, and diced onion. Season with salt and pepper and serve with mashed potatos, green beans and cold beer!

Remove from bone and curry, my favourite.
Serve cold with Chow Chow pickles.
If there isn't much meat left throw it bone and all into a stock pot as a base for a soup. Did that with my ham bone.
