This recipe is only 200-something calories - great for dinner! I serve it with a side of rice. Totally yummy and takes ONLY anout 30 minutes to make!
I use powdered onion because my fiance hates onion, but it'll give it some pop for sure if you use fresh instead of powdered.
A Good Easy Garlic Chicken
INGREDIENTS:
3 tablespoons unsalted butter/margarine
4 skinless, boneless chicken breast halves, sliced
2 tablespoons minced garlic
1 teaspoon seasoning salt
1 teaspoon onion powder
1 can low-sodium chicken broth
1 tablespoon cornstarch
DIRECTIONS:
1. Rub the seasonings on the chicken slices.
2. Melt butter or margarine in a large skillet over medium high heat. When warm, sizzle the garlic and onion (if using fresh).
3. Add chicken and saute until brown on each side.
4. Add broth and cover over medium heat until the chicken is cooked through and juices run clear.
5. Add cornstarch to some water and pour into the skillet, stirring until thick.

If your kids love pb&j, they might love it in a quesadilla - perfect for lunch!
First, melt some butter in a skillet. Spread peanut butter on a tortilla and then fold it in half so that the peanut butter's inside. Put the tortilla on the skillet and cook each side until light brown. Slice it and then have the kids dip them into jelly!

mac and cheese is the old standby, but i find the best is the picnic idea:
get a bunch of different things that go well together:
hummus, carrots, crackers, cheese, tuna salad, peanut butter, apples. and cut everything into bite size peices and they can pick what they like best.
finger foods are the most fun, so try steaming artichokes for about 15min and then letting the kids pick them apart (and dip them in mayo)
or let them make their own burritos with lots of fresh veggies (and low fat meat)

Kids love to choose toppings and dip things. For lunch you could do some kind of fondue. For dinner I would suggest tacos. Set up all the toppings in seperate bowls and let them choose what to put on it.

Begal pizzas are easy too. Begals with any kind of tomato sauce on it and scedded Mozzerela cheese. put what ever type of topping on them and broil in oven until the cheese starts to bubble. Should only take 3-5 minutes in oven. Kids can make their own but you would cook them. Have fun...

My kids love wraps for lunch. I can usually get away with throwing some vegetables in as well. Use any of your children's favourite foods. I have used cream cheese and apple slices or bananas. Tuna salad etc.
For dinners, they love turkey tacos because they get to choose their toppings and assemble them themselves.
Another favourite is baked salmon. I just season theirs with some dill, olive oil, lemon juice, salt and pepper. I serve it with brown rice with some hoisin sauce stirred in and baby corn cobs or carrot sticks.

Grilled chicken nibbles, cooked on a rack are great as kids love to eat with their fingers.
Potato wedges, carrot, celery sticks wedges of tomato and egg lettuce.

1) sliced apples and peant butter
2) mini bagles, tomatoe sauce and cheese
3)grilled cheese with tomatoe soup w/ a dollop of sour cream
4)4 celery stalks, cream cheese, raisins
5) trail mix: bag of M & M's, can mixed nuts (unsalted)
1/2 cup dark raisins,yellow raisins,1 sm. bag pretzels
6)BANANA POPS:
Peel a banana and cut in half crosswise. Dip each half in unsweetened orange juice; roll in chopped peanuts, coconut, granola or corn flakes. Insert a wooden stick in the center of each half, wrap in waxed paper and freeze.
