EGGS MIMOSA :
6 hard boiled eggs
parsley
mayo
black olives
salt & pepper

Cut the hard boiled in half, take carefully the yokes off and
put them (except 2) in a bowl where you add the shredded parsley, salt, pepper &
a little of mayo.
Feel the egg whites with the mixture. Smash the other 2 yokes a little and
sprinkle the yokes on top of the eggs.
Decorate with a slice of black olive

Bon appétit

This year I did plastic. But when I do real ones. I always make deviled eggs out of the left overs. They go great with Easter lunch and are all gone within minutes.

I will assume you mean the 'cooked' eggs? The chocolate ones should be no problem!
Of course, there is egg salad
deviled eggs
potato salad
I also make a casserole with sliced potatoes in casserole dish, salt and pepper then add a layer of thinly sliced onions, another layer of sliced cooked eggs, topped with grated cheddar cheese and a pint of half and half or whipping cream,
cover and bake at 350 abt 30 minutes until potatoes are tender and cheese is melted. Serve with green salad.
Yum.
another idea is to make a meatloaf and in the center of it, lay whole cooked eggs in a row, wrapping the rest of the meat around it. Bake as usual and 'frost' your meatloaf when done baking with mashed potatoes. top with cheese. It is so pretty to slice into your meatloaf and have an egg center! Try it!
Maybe these ideas will help you solve the egg problem!
