Do you have any good recipes using tofu? They can be entrees, side dishes, or desserts. Thanks in advance!

Bunches: to make tofu taste great, you really should marinate it in spices.
one of my favorites is tofu jerky 'cause it is great to take on the road. all you do is marinate the firm tofu cut into thin strips in:
3 T. liquid smoked flavor
1/3 C. Soy Sauce (low salt is better, but regular works)
1 T onion powder
1T garlic powder
1t. sugar
1t. cayenne pepper (optional)

if you seal it in a ziplock, and suck all the excess air out it marinates well.
then you slow cook it in the oven on cookie sheets at the lowest temp you can set it on. mine is 170 deg. F turn every hour, takes about 4 or 5 to be done.

note that this could damage your cookie sheets if you get baked on marinade.

Also Check out vegweb, I would only try recipes that have been reviewed. some of my faves are tofu peanut butter chocolate pie, manicotti stuffed with tofu and spinach, and tofu smoothies.
if you are vegan, buy Nutritional yeast, it can impove any tofu dish (that isn't sweet)

PUMPKIN PIE
Have Ready:
1 pie crust, pre-baked

Pie Filling:
1 10.5 oz package silken tofu (firm)
1 1/2 cups unsweetened cooked pumpkin (canned or pureed)
1/2 cup maple syrup
1/4 cup cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves

Preheat oven to 350°. Crumble tofu and place in food processor or blender. Add remaining ingredients and process the mixture until it is completely smooth and creamy. Pour the blended mixture into crust. Smooth out top. Bake on oven center rack for 45 minutes. Cool before cutting.

Tofu is an excellent source of protein!

Buy a block of firm or extra firm tofu and chop up 1/4 of package into cubes. Add to a frying pan (sprayed with non-stick spray) and then add 2 beaten eggs Top with non-fat cheese! It's a great breakfast...yummy and lean and high in protein!


This is also a great recipe ;-)

1 tablespoon black bean-garlic sauce (see Note)
2 teaspoons minced garlic
10 ounces mixed Asian greens or baby spinach

2. Cooking Directions
To prepare dressing: Puree carrot, carrot juice, miso, vinegar, oil, ginger and garlic in a blender or food processor until smooth.
To prepare tofu: Slice each tofu block crosswise into 5 slices; pat dry with paper towels. Combine honey, oil, soy sauce, black bean-garlic sauce and garlic in a small bowl. Spread half the marinade in a large baking dish and top with the tofu slices. Spread the remaining marinade over the tofu, covering completely.
Preheat grill to medium-high. Oil the grill rack (see Tip). Grill the tofu until heated through, 2 to 3 minutes per side. To serve, toss greens with the dressing. Divide among 6 plates and top with the tofu.
Yield: 6 servings

3. Still Hungry?
Look for Asian greens (tatsoi, mizuna and/or pea shoots) packaged as a salad mix. They're slightly more bitter than many spring greens and will stand up well to this aromatic, vinegary dressing.

Notes:
Ingredient notes

The color of miso (fermented soybean paste) depends on how long it's aged. In general, the lighter the color, the milder the flavor. It will keep, in the refrigerator, for more than a year. Black bean-garlic sauce, a savory, salty sauce used in Chinese cooking, is made from fermented black beans, garlic and rice wine. It can be found in the Asian-food section of large supermarkets or at Asian markets. Use it in stir-fries and marinades for beef, chicken or tofu. To oil a grill rack: Oil a folded paper towel, hold it with tongs and rub it over the rack. (Do not use cooking spray on a hot grill.)

The only way I eat tofu is in hot and sour soup. You can find the recipe on epicurious.com. Just do a search on it, it's the ONLY hot and sour soup recipe, and it's so so good. I just don't use the dried mushrooms in it.
