my boyfriend doesnt like any kind of beans , so i can't make him rice and beans , so i was wondering simple ways to spice up plain white rice

Instead of water I use homemade chicken stock to cook rice in. Most store bought broth or buillion is very high in sodium. In addition to the stock, sprinkle in some freshly grated parmesan and garlic. Yummy.

Instead of cooking it with water, cook the rice with a chicken broth, or any broth that you like. This adds a lot of flavor to your rice. I prefer low-sodium broths. If you don't have/want/like broth, season it with your favorite seasonings (not too heavy). My friend made me some rice seasoned with pepper, chile powder, and mustard seed before. The chicken that was served with the rice was BBQ chicken and it paired well. They also make "Rice Seasoning" packets, which can be found at any Asian/multicultural market. Chopped seaweed also tastes good with my rice. Lastly, you can cook the rice plain first, then fry it in a pan with soy sauce, garlic powder, peas, carrots, egg, and pepper, which is really just simple fried rice.

Sometimes I use diced tomatoes in addition to water to cook my rice. Other times, I will add cheese right before it's finished cooking.

A couple of times, I have cooked rice and set it aside. Then I would dice an onion, some celery, and some green pepper, and saute them. Then I would mix the rice, the vegetables, and a can of tomato sauce together, and enjoy that.

I like garlic and chicken broth instead of boring white rice. Or you could toss in some curry powder and frozen peas for a pilaf. Or just toss in some Cajun seasoning.

Add butter and parsley while cooking the rice. Flavorful, but still light and a nice side dish that goes with most anything.

Brazilian rice
1 cup rice
2 cups hot water
2 tbsp O.Oil
3 minced garlic cloves
salt
Chicken bouillon powder (optional)

heat the oil, add garlic , fry until you can smell it. add rice and salt. stir, add water. When boils, lower the heat, cover and cook until dry, about 20 min.

The chic boullion in to be added to the hot water is you like. So simple. So good.

Greek Rice
Ingredients:
1 tablespoon olive oil
1 cup chopped red onion
1 red bell pepper, chopped
1 clove garlic, minced
3 cups cooked rice
1/2 cup dried tomatoes, softened in water and cut into julienned strips
1 (4 1/2-ounce) can sliced black olives
1 tablespoon chopped fresh parsley
1 1/2 teaspoon dried oregano leaves
1/2 cup crumbled feta cheese
1 tablespoon lemon juice
1/4 teaspoon ground black pepper
Fresh oregano for garnish


Directions:

Heat oil in large skillet over medium-high heat until hot. Add onion, red pepper and garlic; cook and stir until onion is tender. Stir in rice, tomatoes, olives, parsley and oregano; heat thoroughly.

Remove from heat; add cheese, lemon juice and black pepper. Stir until well blended. Garnish with oregano. Serve immediately.

PERUVIAN RICE

2 c. minute rice
2 c. water
1/2-2/3 can diced Ortega chilies
1 pt. sour cream
1 tsp. salt
2 c. grated Jack cheese

Mix first five ingredients together. In casserole dish, layer rice mixture and cheese. Repeat layers ending with cheese. Bake at 350 degrees for 1/2 hour.

make stir fry rice
use soy sauce, left over vegetables & meats. Beat 1 or 2 eggs together. Add to skillet. Stir while cooking all together! Very quick and easy to make!

Chicken broth or cheese sauce mixed in are good. You can also make Mexican red rice or Spanish rice.

Cook your rice in chicken broth instead of water. Crush up some fried bacon, add scallions, use soy sauce.
