This recipe yields 4 dozen.
Remember all ingredients should be room temperature.

1.Dissolve :
1 ounce yeast in 1 cup warm water
warm 1 quart milk
add to the yeast and warm milk 3 cups flour and let rise for about 1 hour to create
what is called a sponge.

2.Put together:
1 quart warm milk
1 lb. Butter
2 tablespoons shortening
1 cup sugar
2 tablespoons whiskey

3.Mix steps 1 and 2 with 6 eggs, pinch of salt, 9 cups flour until you get a really good
textured dough.
Let the dough rise until double in size, cut the dough into 2 ounce pieces and form balls.

Place the dough balls on a well oiled flat pan, let them rise for about 1 hour to about 1 1/2 hour.
Fry dough balls in 350 degree oil until well browned on both sides then put them on a brown paper bag to drain the oil form frying.
Let cool for a while and fill using a pastry bag with a tip that has a whole about the size of a pencil, roll in sugar or 10x sugar and enjoy with a hot cup of coffee.
You can fill them with any jellies that you like.

Microwave 1 cup of milk so that it is warm (not hot) add the 5 teaspoons of yeast (2 packets) and a pinch of sugar and stir. Let stand for about 5 minutes In a bowl combine 2 cups of all purpose flour 1/2 cup of warm mashed potatoes (see the bottom of the page) 1/2 teaspoon of salt 1/4 cup of sugar Then in the bowl add The milk mixture and 2 Tablespoons of oil Mix the dough well by hand or in a mixer with a dough hook for 3 minutes.Mix the dough well by hand or in a mixer with a dough hook for 3 minutes. Prepare your kneading surface by spreading a few tablespoons of flour on a smooth surface. Put the dough in the middle of the flour and sprinkle a little flour on top and on your hands. Knead the dough a few times. Once the dough has been kneaded, spread it out to be a half inch thick with your hands or with a rolling pin. Now it is time to cut out the donuts, you can use a donut cutter or... Just use something about the same size and then... Find something to make the hole with. Place the donuts on a floured pan to let rise as you get the oil ready. Let them rise for a total of ten minutes (it takes about five minutes for the oil to heat up). Pour about a half inch of oil (vegetable oil) into a cast iron pan. An electric fry pan works great also. The oil needs to be about 360 degrees which on my stove is about Medium to Medium High. If the oil starts to smoke it is way too hot. Test the oil with some of the scraps of dough and when it is ready cook the donuts until golden brown on each side. Allow the donuts to cool on a rack or on some paper so that the oil soaks off.

Authenic Zurich Fastnachtkuchlein (Or Carnival cookies)
2eggs
5 Tbsl cream
1/2 tsp salt
2 Tble sugar
2 - 2 1/2c flour
deep fat for frying.
Beat eggs with cream salt and sugar. Beat in flour to form a stiff dough. Knead lightly until dough is smooth. Cover and let rest for 5 minutes. Cut dough in walnut size pieces and roll out lightly as thinly as possible (abt a salad plate size) Let it dry about 15 minutes and then fry until golden brown. Sprinkle with powder sugar.
