Scotch Eggs
A crispy coating made with cornflakes and pork sausage gives a different treatment to these hard-cooked eggs.
INGREDIENTS:
1 pound bulk pork sausage
Salt and pepper to taste
6 hard-cooked eggs
1 egg, lightly beaten
3/4 cup crushed cornflakes
Prep:
Divide the sausage into six portions; flatten and sprinkle with salt and pepper. Shape each portion around a peeled hard-cooked egg. Roll in beaten egg, then in cornflake crumbs. Place on a rack in a baking pan. Bake, uncovered, at 400° for 30 minutes or until meat is no longer pink, turning every 10 minutes. Yield: 6 servings.

EGGS MIMOSA :
6 hard boiled eggs
parsley
mayo
black olives
salt & pepper
Cut the hard boiled in half, take carefully the yokes off and
put them (except 2) in a bowl where you add the shredded parsley, salt, pepper &
a little of mayo.
Feel the egg whites with the mixture. Smash the other 2 yokes a little and
sprinkle the yokes on top of the eggs.
Decorate with a slice of black olive

I'm not sure what a quite recipe is, but egg salad sandwiches are always my favorite. And hey, they are quite!!!
You can always chop the eggs up and use on top of a salad.

Creamed Eggs. I know the name sounds gross, but it's actually very good and simple.
Slice up 2-3 hard boiled eggs over toast, English muffins or biscuits. Make a cheese sauce (or buy the type in a jar and heat it up). Pour the cheese sauce over the eggs. Enjoy

Deviled Eggs.
Cut the boiled eggs down the middle. Scoop out the egg yolks. In a mixing bowl, mix with the egg yolks, sweet relish and mayo, and place the mixture back in the egg whites and chill.

There's deviled eggs, egg salad, sliced on Cobb salad or any salad, or I've even seen them in meatloaf! You just pat out the meat, line up the eggs down the middle, roll the meatloaf around them, and bake as normal. It's really pretty when it's sliced.

Egg salad sandwiches on toast or tuna salad sandwiches on toast. It's a win win situation.
