You may be looking for something different. Here goes.
1. Mexican squash--much less bitter, slice thin, saute and add butter and some sauteed onions and serve on rice.
2. Cauliflower--OK, usually it's boring. So get a young one, break it up small, saute on canola oil with sweeter bread crumbs added near the end and 1/2 teaspoon of sugar, plus grated cheese of choice--I use Provolone or shredded Mizithra.
3. Three bean salad--this uses wax beans, one can, white or small red kidney beans, one can minus one ounce, and garbanzo beans. Be sure to use one scallion cut into thin rounds and a white ranch dressing.
4. Broccoli--this only tastes good steamed, along with a medium cheddar sauce and a few drops of Cajun seasoning.
5. Corn--to one can white corn add 2/3 can red kidney beans drained of curse, cut up yellow pepper, 1/3 yellow onion pre-sauteed for one minute, one sweeter tomato, 3 oz. tomato paste. Heat in a glass dish; add mild black olives and basil leaves last at table.
6. Sweet peppers--they're now selling these in a bag, so be sure they're sweet; cut into fours, remove stems, and saute on olive oil; then add 1 tsp. rice vinegar and 1/2 tsp. sugar until they're exactly right and serve over rice or thin pasta with a salad dressing such as creamy Caesar.
There are types of vegetables of course--leafy greens,
reds, yellows, root, etc; this list is just some favorites.

Types of vegetables
Vegetables are often cooked, although some kinds (salad vegetables) are eaten raw. Vegetables are available in many varieties and can be classified into biological groups or ‘families’, including:
Leafy green – lettuce, spinach and silverbeet
Crucifer – cabbage, cauliflower, brussel sprouts and broccoli
Curcurbits – pumpkin, cucumber and zucchini
Root – potato, sweet potato and yam
Edible plant stem – celery and asparagus
Allium – onion, garlic and shallot.
Legumes
Legumes or pulses contain nutrients that are especially valuable. Legumes need to be cooked before they are eaten; this improves their nutritional quality, aids digestion and eliminates any harmful toxins. Legumes come in many forms including:
Soy products – tofu (bean curd) and soybeans
Legume flours – chickpea flour (besan), lentil flour and soy flour
Dried beans and peas – haricot beans, red kidney beans, chickpeas and lentils
Fresh beans and peas – green peas, green beans, butter beans, broad beans and snow peas.

I think you must mean other things that you can have on a vegetarian diet? That would be beans, pulses, legumes, lentils, sprouts, grains, quinoa, millet, flax, spelt, greens such as kale, swiss chard, mustard greens, and turnip greens, rice, chia, sunflower seeds, nuts, and all fruits and vegetables. Your question is a bit confusing

I guess you forgot about the green leafy vegetables like cabbage. I am not sure if root crops like yam or potatoes are vegetables, and the tubers. there are also the yellow veggies like squash those that grow in vines like the gourd or the chayote... I hope these are correct... hehe... at least from where I came, these are vegetables...
