Cow tongue, Spanish rice, and homemade beans,
Buy the cow tongue from a meat market if you have on around. To start of with boil it in water with two teaspoons of oil. This can take a while so make sure you give yourself enough time to prepare. As soon as the tongue is done boiling take it out of the water and begin to peel it. Cut it into Small pieces and set a side.

Tomato sauce:
5-15 tomato's(It depends on the size of the tongue)
3 cans of tomato paste
1 can of tomato sauce.
2 teaspoons of salt
1teaspoon of pepper
2 garlic cloves
Blend this together and bring it to a boil
add the tongue as soon as it begins to boil.

For Spanish rice:
make your rice the way you normally do

I like to cut about 3 to 4 tomato's depending on how much rice I am making. Blend them in a blinder. Add some salt and a little cilantro to the blender. Blend well and add to rice.

Beans:
Buy pento beans from the store(Dry) It takes a while for theses to cook also. I add about 1/3 of a cup of oil to my big pan of beans, salt, and some fresh garlic. Boil until ready. After done. Freeze the ones you are not going to use and put some in a pan and smash them. Add a little water if needed, because you don't want your beans to be way too pasty.

Oaxaca is most known in Mexico for its mole. A thick dark sauce, rich in flavor, or Oaxaca tamales which are banana wrapped tamales. The following link might provide you with some insight. Please do not offer him any quasi Mexican Tex Mex stuff with ingredients that have never existed and never will in Oaxaca cuisine. A famous beach venue, Huatulco is also in Oaxaca so they probably do some fancy stuff with fish as well. You might try reading some Diana Kennedy cookbooks because outside Mexico she is the most knowledgeable person who is not Mexican, about Mexican cuisine.

Buy mole Doña Maria, yo can find it in the Mexican food section of many supermarkets, but here is a litlle secret, mix the mole in the blender with 2 tablespoons of peanut butter one chocolate bar ( could be Hershey) and 1 cup of hot water. Wait until is well mixed
Fry 5 or 6 chichen breasts add the mole mixture and let it cook for 10 minutes. Serve with beans and white rice. Enjoy :)

I learned how to make a Mexican salsa for tacos or tortillas from a co-worker once.
1 large onion - small dice
1/2 bunch of cilantro - minced
3 or 4TBSP of FRESH lime juice
salt and wht pepper to taste

Its so very easy to make, just combine everything together. The taste is authentically delicious.
