Tacos are just about a rolled up tortilla with any kind of filling. In Mexico you can find tacos made with refried beans, grilled meat, pork and adobo, ham and eggs, just about anything will go into a taco. At least in Mexico our tacos are soft, not the hard shell which is an Americanized version of a taco but not a taco at all. If you ever travel to Mexico you will find all kinds of tacos, all of them different, all of them delicious, but the secret to some of them is the salsa. Some taco businesses are very secretive about their salsas, in this business, a salsa can make you or break you. Taco is a culture in this country, people can eat them for breakfast, lunch and dinner. They are eaten by poor and rich alike. The taco is the most democratic food in this country.

Not certain as to what you want for an answer, but yes I have eaten tons of tacos. I am not a Latino. I prefer tacos with shredded beef or fish tacos. But I also like shrimp, pork, chicken and ground beef tacos as well. If doing a party or dinner make three varieties: ground beef, pork and shrimp or fish to give good sampling of possibilities. Serve with usual sides: tomatoes, guacamole, dice onions, chopped jalapenos, sour cream, cheese, cilantro, and lettuce.

Anything, pork, beef, chicharrón,cactus, mushrooms,poblano chile julianne fried with onion and with heavy cream, even dulce de leche, glorias or cajeta. There´s an unwritten rule, though, never fill a taco with a tamal!

I know this may sound strange but my husband family likes to put canned corned beef on the taco then fry them they are good but the grease splatters when frying
