Queso Chihuahua or Chihuahua cheese is a soft white cow's-milk cheese of Mexican origin available in braids, balls or rounds. Asadero, which means "roaster" or "broiler," has favorable melting properties and becomes softly stringy when heated--very similar to unaged Monterey jack cheese.
It is also called queso menonita, after the Mennonite communities of northern Mexico that first produced it. This cheese is now made by both Mennonites and non-Mennonites throughout the country. Since Chihuahua cheese is widely sold outside of Mexico, it should not be necessary to look for substitutes, however a very mild cheddar or a flavorful jack cheese could replace it in many recipes.
The cheese is named after its place of origin, the Mexican state of Chihuahua. The best cheese is produced in Ciudad Cuauhtemoc, and Casas Grandes, Chihuahua.
I have seen this cheese in my local Albertsons! If not, try a specialized Mexican or Latin grocery store.
