When I think of a casino style party I think classic finger foods from the sixties, shrimp cocktail, sandwiches, cocktail franks you can also serve wings, mini eggrolls, veggie and cheese tray.
I make these and everyone seems to enjoy them
Cheddar Olive Poppers
INGREDIENTS
2 cups shredded Cheddar cheese
1/2 cup butter, melted
1 1/4 cups all-purpose flour
36 pimento or jalapeno-stuffed green olives
DIRECTIONS
Mix Cheddar cheese and flour together in a bowl. Stir in butter, cover, and refrigerate 1 hour, or more.
Heat oven to 400 degrees F (200 degrees C).
Form chilled dough into small balls, pressing a deep hole in the center using your thumb. Stuff each ball with an olive, and seal completely.
Bake in the preheated oven 15 to 20 minutes until golden brown, watching carefully and turning as needed to prevent bottoms from burning

if not a fancy party, I'd go with finger-food h'ors d'orves. Set out platters of crudite (Veggies n dip), mixed cheeses (each type cut into a diffrent shape with a bunch of grapes in the middle, cackers & bread on the side), small things that won't cause people to sit too long.

foods that don't require silverware.... cheese and crackers...multicolored tortilla chips.... mini sandwiches.... mini meatballs, vegetables, try finding those gold choc coins you can decorate with them and they can be eaten...... remember to have lots of colors and textures to the food
