Every day I eat a cup of pinto beans mixed with a cup of rice, mixed with some salsa. It actually is pretty good. Is this a good diet? What nutrients am I not getting? What vegetarian foods might you suggest to suplement this diet?

You definitely need to get some green veggies in there somewhere. Spinach with garlic and tomato over rice is very tasty, and I've made a meal of it on more than one occassion.

Brown rice. Rotate grains and use quinoa and millet as well as the rice (for iron and trace minerals). Also, change beans by having black beans or kidney beans sometimes. Make fresh salsa with scallions once in while. Chop up some lettuces and greens and have that, too. Chunks of avocado once a week. Other than that you are missing an orange veggie and fruit.

Definately add some veggies. Use some grilled red onions and bell peppers and make your meal fajita style.

Do you eat this meal three times a day? This definately isn't enough food for the entire day.

For breakfast, scramble some eggs or eat yogurt and fruit. For dinner, add lots of leafy greens to your rice and bean mixture.

Also, consider using kidney beans and black beans for variety and added nutrition.

its great if the beans don't contain fats (lard, etc) and if you add leafy greens, fruit, and other whole protein grains such as quinoa or millet. The beans and rice give you the protein and fiber you need, but you need to get more vitamins and minerals from veggies and fruits-juice extracting is a great way to get lots. You can usually get juice extractors at thrift stores very inexpensively. I juice carrots, celery, parsley, swiss chard and apple or pear together twice a day-loads of energy

You have complex carbs working for you as well as protein, but you are missing minerals and vitamins that veggies and fruits bring. For a snack or at another meal, work these in. Also, your body needs calcium for strong teeth and bones.
