Well my first suggestion would be to head to honey baked ham. You can get a really yummy ham for about $20! But if you insist on making the food yourself here is a recipe that you can make in advance and is really delicious. You just have to multiply it by 15.
You either need to pound a chicken breast flat or buy chicken cutlets. Salt and pepper them. Lay a slice of fontina cheese, a slice of proscuitto and a few fresh sage leaves. Roll them up and use a toothpick to secure them closed. Sautee them in a frying pan to brown the outside. Finish them in the oven at 400 for about 25 minutes. In the pan you sauteed the chicken in delgaze the pan with equal parts of marsala wine and chicken stock. Let this reduce by half. At the end whisk in 2 tbsp. of butter per 1/2 cup of marsala.

Why not try a Soup bar? You can make a large pot of soup, create baskets of wonderful breads....or, pick a theme...maybe mexican? You can do a taco salad bar as well...make crispy shells out of tortillas to use as the "bowl" and display bowls with different fillings, grilled chicken strips, sauteed beef, shredded lettuce, sour cream, salsa, etc...
and you can serve sopa pillas for dessert and you're good to go! Inexpensive, filling and fun... :) Tip: call ahead to a local mexican restaurant, have them prepare everything for you and simply transfer it into more decorative bowls and such. Its hard to put everything together when you are working full time...

The night before, put water & dressing pkgs. into crock pot. Stir. Trim visible fat from meat and place in crock pot. Cook on high for 1 hour. Turn to low and cook all night. Shred with 2 forks in a.m. and cook on low for 3 or 4 hours more. Serve on hard rolls or hoagie buns.

How about Lasagna, it's pretty simple. Otherwise I made this dish the other nite for family that came to visit and It was chicken, like chicken breast, a small round pasta, alfredo sauce and spinach and sun dried tomatoes, I bought it like that from Sams' Club, it was marvelous! But I think next time I will make it on my own like that pretty simple. Good Luck!

Just because it's been done once doesn't mean it can't be done again. Bar b que is versatile, not everyone grills the same things. So is spaghetti, I don't know anyone who makes it exactly the same as the next person. Fix what you are comfortable fixing.

marinate chicken in either Greek or Italian dressing and grill it.
Put a beef roast in a crock pot (no kidding this really works!)
Take your coffe maker and make a 2nd pot with used grounds. Pour the weak coffee over the beef and let it simmer in the slow cooker.(And if you use one of those liner things the cleanup is a snap!) Makes a fab gravy mmmm!
