A vegan stays away from all animal products, food, by products, even leather shoes, belts and other clothes made from animals. Wool also is included as a no no. Vegetarians, generally don't eat meat at all, but tend to eat some dairy products and maybe eggs. Some people even eat fish, no shell fish, and say they are vegetarians; however, a true vegetarian doesn't eat any dairy products, eggs, fish and/or any other meat, but they do ware leather products and other animal type clothing, like wool.

In the past vegetarian was generally thought of being the same as lacto-ovo vegetarian, but shortened to just vegetarian. These days vegetarianism no longer refers to one type of diet/life style, rather it has become a general term to cover roughly 6 types, vegan included.

1) Pescatarian: This type abstains from all meat and animal flesh, except fish

2) Flexitarian: This is a fairly new term for those that the majority of the time follows one of the other types of vegetarian diets, but will occasionally eat meat.

3) Lacto-ovo vegetarian: This type abstains from all flesh foods, but will eat animal products such as dairy products and eggs. This type, also, has two sub-types

a) Lacto-vegetarian: Will eat dairy products but not eggs or flesh foods
b) Ovo-vegetarian: Will eat eggs, but not dairy products or flesh foods

4) Vegan: This type abstains from eating all flesh food, dairy product, eggs, and anything containing animal products or is processed using animal products, including gelatin and honey. They, also, abstain from using any thing containing animal by products such as wool, animal leather, and animal fur.

5) Raw vegan: This type follows the vegan diet and goes further by not eating any processed food and food heated above 115°F (46°C)

6) Macrobiotic: This type includes unprocessed vegan foods and occasionally fish. They avoid Sugar and refined oils.

People make the choice of follow one of these diets for different reasons: religious beliefs, health concerns, animal rights, and environmental concerns to name a few.

Its to do with degrees...
Vegetarians may eat things such as eggs, cheese, yougurt, milk, honey, some eat fish and fish products too.
the may or may not wear leather, wool, silk. They might be happy using the bio washing powders and so on...
Vegans however will not eat dairy products or fish products of any kind, no eggs etc.
They also may be more careful about other things, like no animals fats in biscuits for instance (cookies), or they wont wear leather, wool or silk. I know they check products for any kind of animal products, you will find them in places that may surprise you such as in washing powder , no rennet(thickens milk and other things it comes from animal stomachs) , gelatine (from beef) and many other things.
So a vegan is like a very strict vegetarian.

I hope that helps!
