Spiced Cocoa Doughnuts
2 1/4 cups all-purpose flour
1/2 cup Hershey's cocoa
2 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground cinnamon
1/4 tsp ground mace
1/4 tsp salt
1 1/2 tbsps butter, softened
3/4 cup granulated sugar
1 egg
1/2 cup milk
1/4 cup powdered sugar
Dash ground cinnamon

In medium bowl, stir together flour, baking powder, baking soda, 1/4 tsp cinnamon, mace and salt. In large bowl, beat butter and sugar until creamy. Add egg; beat well. Add flour mixture alternately with milk, mixing until well blended; shape into ball. On lightly floured surface, roll dough to 1/4
inch thickness. With floured 2 1/2 inch doughnut cutter, cut into rings. Reroll dough as necessary. Fry two or three doughnuts at a time in deep hot fat (375 degrees F0 about 30 seconds, turning once with slotted spoon. Drain on paper towels. Repeat with remaining doughnuts. Stir together powdered sugar and dash cinnamon; sprinkle over top of warm doughnuts. Makes about 2 dozen doughnuts.

Drop Doughnuts
* 1 egg, slightly beaten
* 1/2 c. sugar
* 1/2 c. milk
* 2 tbsp. oil
* 1 tbsp. baking powder
* 1 tsp. nutmeg (or cinnamon if desire)
* Oil for frying
- In a medium to large mixing bowl, beat egg slightly. Add sugar, oil and milk. Sift dry ingredients and add to egg mixture, stirring well. Dough will be slightly stiff. Refrigerate dough while heating the oil for frying.

- Heat oil to 350 degrees and drop dough by the teaspoon (or cookie scoop). Turn once. Fry until golden brown and cooked all the way through. Drain. Shake in a bag of powdered sugar, powdered sugar and cinnamon or a regular cinnamon and sugar. Especially delicious warm.


Potato Doughnuts
* 8 tbsps sugar (1/2 cup)
* 2 scants tbsps active dry yeast
* 1 1/4 cup hot milk
* 4 large potatioes, peel, boil, drain
* 3 heapings tbsps margarine
* 4 - 4 1/2 cups flour
* 2 beaten eggs
* a dash of salt
- Mash hot potatoes along with sugar, salt, egg, and hot milk, stir until lukewarm then add in yeast, stir well.

- Add in flour bits by bits, then knead dough well, cover with slightly damp towel, set aside for half hour or until size doubled. Punch down dough, let rise again.

- Punch down dough, roll on a generously floured surface, cut with donut cutter, place on baking sheet, cover with the towel again, let rise, and bake at 350 F for 15 minutes or until slightly golden brown.

- Spread margarine, sprinkle with chocolate rice (I used Ritz brand) OR glaze with your favorite flavor. Here I used cocopandan flavoring (the pink glazed doughnut), plain icing sugar glaze (the white glazed doughnut), and Amarula Cream Liquor (the white glazed doughnut with chocolate sprinkles on them)


Very Easy Potato Donuts
* 1/2 cup vegetable oil
* 8 cup flour
* 1 1/2 cup milk
* 3 cup sugar
* 5 tablespoons of baking powder
* Potatoes, peel, wash clean, boil (3 C mashed potatoes)
* 6 eggs
- Mashed cooked potatoes until tender then mix sugar and mashed potatoes until consistency of paste. Add eggs and beat.

- Add vegetable oil, milk, flour and baking powder. More flour may be added if necessary.

- Place dough on a lightly floured surface and roll to 1/2-inch thickness. Cut out with floured doughnut cutter.

- Heat oil (hot) in a deep fryer

- Drop doughnuts, 2 or 3 at a time. Fry, turning once, for 3 minutes, or until golden brown, drain on paper towels or food rack.


Optional method: If you dont have doughnut cutter, try this method, when the dough is ready, take a small portion of the dough and round it nicely as big as your fist or a littler bit smaller than your fist, then using your point finger, make a small hole in the middle of the dough, nicely. Make one by one until all dough gone. Then fry the doughnuts.

Home Made Doughnuts recipe:

What You Need:

2 Eggs
1 c. Sugar
1 c. Milk
5 tbl. Melted Shortening
1 tsp. Vanilla Extract
4 c. all-purpose Flour
4 tsp. Baking Powder
1/2 tsp. Salt
1 stick Butter
Vegetable spray or cooking Oil

Here's How:

Beat eggs until foamy in a large mixing bowl. Once eggs become foamy, slowly add sugar, beating continually. Stir in milk, shortening and vanilla.
Sift flour, baking powder and salt together. Add these dry ingredients to the wet ingredients, mixing well. Cover and chill the dough for 30 minutes to 1 hour.

Preheat oven to 450 degrees. Spray or grease the baking sheet with vegetable oil or cooking spray.
Roll out the dough on a lightly floured surface to 1/2-inch thickness. Cut out using a doughnut cutter and placing on baking sheet 1 inch apart.

Bake until golden brown approximately 10 to 15 minutes.

Tips:

For a cinnamon sugar coating, brush doughnut with melted butter and roll in a mixture of 1 cup Sugar and 1 tsp. Cinnamon.

Oreo Doughnuts:

24 doughnuts

1 1/2 cups flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
2 eggs
24 Oreo cookies, preferably double stuffed
oil, for frying
powdered sugar, for dusting

1. Combine the flour, sugar, baking powder, and salt in a medium bowl; set aside.
2. Beat the milk and eggs until well blended.
3. Add to the flour mixture; blend well.
4. Let batter stand for 10 minutes.
5. Meanwhile, heat 3" of oil in a deep fryer or deep saucepan.
6. Dip the Oreos, one at a time, into the batter, allowing the excess to drip back into the bowl.
7. Fry 3-4 cookies at a time, until golden brown, turning to cook both sides.
8. Drain on paper towels; dust with powdered sugar, and serve warm.

This is not a fancy or bakery donut recipe. When I was a kid my mom would make them for us and they were quick and easy. It takes a refrigerated roll of dinner rolls and she used an electric skillet. She made holes in the middle of the dinner rolls and fried them in the skillet. Once golden remove and lay on paper towels to drain. Mix together confectioners sugar with a little milk or water and glaze.
