Jamaican Chicken:

1¼ hours 20 min prep
4 servings

1/4 cup fresh lime juice
1/4 cup fresh lemon juice
1/2 cup white wine
3 tablespoons Dijon mustard, divided
1/4 teaspoon grated nutmeg
1/2 teaspoon ground cumin
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1 teaspoon Old Bay Seasoning
1/4 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper
1/4 cup Worcestershire sauce
1/4 cup sweet vermouth
1/2 teaspoon liquid smoke
5-6 dashes Angostura bitters
4 boneless skinless chicken breasts
2 tablespoons butter

1. In a large bowl, combine all ingredients except chicken.
2. Add chicken to bowl, cover with plastic wrap, and refrigerate at least one hour.
3. Heat oven to 350 degrees.
4. Remove chicken from marinade and place in spray-coated 9 by 13 inch pan.
5. Pour remaining marinade over chicken and dot with butter.
6. Bake for 45-50 minutes, basting occasionally.

As a chef there in the 1980's at a resort in Montego Bay, Jerk is a nice dish, ackee and salt fish is more a breakfast meat, things like, escevche fish small fish pickled with onions, allspice, vinegar and pimento leaves, "Rundown" a stew made with fish assorted veggies and coconut milk, curried goat or chicken, peas and rice, johnnycake, buhla cakes a spicey amost flat cookie like cake, fish of any kind is popular, meat is mainly pork or chicken or goat, some beef, mutton to, not much veal or other poultry.

Lots of veggies like callaloo, eddoes, dasheen, green bananas, tubers like yellow,negro and white yams, sweet potatos, not like America ones these are white inside. Dried beans and peas like pigeon peas, lima beans and kidney beans.

Fruit is abundant and lots of rum, I like Irish Moss drink and Xmas I always make a batch of Sorrel a red flower from the Hybiscus family, with lime juice, sugar and a dash of rum. Desserts like Jamaican Fruitcake and also ice cream made from the Soursop tree.
