Carne Asada is so incredibly good! Birria is a close second - I had it for the first time 2 years ago. When I lived in Mexico, I never tried it. But one of my favorite things to do when I lived there was to stop by a local taco stand after a night out and get tacos de carne y queso with a little lime on top. We also ate gorditas at a place around the corner from my apartment. So incredibly good! Thanks a lot - now I'm hungry.

Nice juicy carne asada, with some black beans, jalapenos, pico de gallo, and tortillas. How can you beat that?
PS
I'm not sure if I've seen Birria on a menu anywhere, and I have no Mexican friends/acquaintances, so I've never had it. But I looked it up online and it sounds very good. I'll have to see if I can find it or make it sometime.

I like my Tamales, they're identical to my Mom's, and I could eat a whole batch in a day. They are labor consuming but well worth the effort. People have tried to mimic the recipe, but all fail miserably. They try to simplify the process making them, because they are so tedeous, and try to Americanize Mexican food in general. That to me is sheer sacrilege. They'll all burn in hell one day.

It's would have to be Chimichangas. They are the best! The cheese sauce that goes on top of them makes it the best thing to ever eat. Oh, by the way, it has to be the real cheese sauce that looks white, no that yellow cheddar kind.

Moronga, or rellena. Is a sausage made of pig's blood in Mexican cuisine. Spices, herbs, onions and peppers are added and then boiled in the pig's intestines for several hours. It is served in a sauce, either "chile rojo" or "chile verde".
