Beans. Leafy greens. Broccoli. Mushrooms. anything!! Better yet, learn to cook for yourself! I went veg when I was 12, I really had fun learning new recipes. The key is FLAVOR. You won't miss meat at all if you use spices and herbs.

I always have instant brown rice and beans on hand. Beans and rice is so easy to make, just dump some instant rice into a bowl along with some rinsed, drained beans and put it in the microwave for 2 minutes or so...
Veggie burgers are easy too.
I really like Boca's vegan variety. I usually grill it on a pan, or pop it in the microwave. Either way is really fast, under 5 minutes. Then just put it on a bun with your fixin's, and you've got a tasty meal!
There are also a ton of microwave vegetarian meals. Amy's and Seeds of Change are my favorite brands, but there are so many others. If you've got a Whole Foods near you, you should go check out the frozen foods section, as most of those foods can be heated in just a few minutes.

Please note that human dietary requirements is a science.
A human body absorbs very little protein and many people believe that one must eat a lot of it. It is expelled from your body through your urine once your body has recieved enough.
Protein is in all carbohydrates = pasta, rice, bread and is more than eough to suffice. If you however want to eat more protein rich foods try beans, biscuits or mix soy lecithin into a drink, which is pure and contains no steroids with a very high protein content. So whilst you think are missing protein you are getting plenty. You will be surprised how many body builders are vegans.

Beans, peanut butter, and nuts. They are meat free and are good sources of protein.
you could simply pick the meat out of whatever she makes. I was a vegetarian as a teenager and my mom would always make me a salad with my dinner if it was something I couldnt pick the meat out of. And if I didnt like what was being served I made a pb and j sandwich. Your mom is obviously the head of household and I'm sorry but if the majority of your household is meat eaters then you take what you can get unfortunately until you can provide for yourself.

beans nuts grains anything that a plant is making for the embryo or seed, the leavy parts of the plant a humans digestion has a hard time breaking down the cellulose walls of the plant cell and in turn has very little nutritional value except for vitamins minerals and mostly fiber

dude i am totally with u there my mom does the same thing all i can say is beans but u should get a vitamin the doctor recomended for me centum or one a day
